For the Filet Mignon:
- 2 filet mignon steaks 6 oz each

- 10 large shrimp, peeled and deveined

- Juice of 1/2 lemon
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
For the Buttery Herb Pasta:
- 8 oz linguine or fettuccine
- 3 tbsp butter
- 2 cloves garlic, minced
- 1/4 cup reserved pasta water
- 1 tbsp chopped parsley
- Salt and black pepper to taste
- Optional: grated Parmesan
- Instructions:
1. Begin by cooking the pasta until it reaches an al dente texture in a pot of generously salted water. Remember to reserve 1/4 cup of the pasta water before draining.
2. While the pasta is cooking, prepare the filet mignon. Allow the steaks to reach room temperature before applying a generous seasoning of salt and freshly cracked black pepper.
3. In a hot cast-iron skillet, heat olive oil over high heat. Carefully place the steaks in the skillet and sear for approximately 3 to 4 minutes on each side for a perfect medium-rare finish. In the last 2 minutes of cooking, add in the butter, crushed garlic, and aromatic herbs, continuously basting the steaks for enhanced flavor.
4. Once cooked, remove the steaks from the skillet and let them rest for about 5 to 10 minutes to ensure juicy tenderness.
5. For the garlic herb shrimp, in a separate skillet, heat olive oil and butter over medium-high heat. Introduce minced garlic, followed by the shrimp. Sauté for about 1 to 2 minutes on each side, cooking until the shrimp turn opaque and have a golden hue. Finish with a splash of lemon juice and the fresh parsley, along with seasoning to taste.
6. To create the buttery herb sauce for the pasta, melt butter in a pan over medium heat. Once melted, add minced garlic and sauté just long enough for the garlic to become fragrant. Stir in the reserved pasta water, along with parsley, salt, and pepper, then incorporate the cooked pasta until it is evenly coated.
7. To serve, elegantly arrange the filet mignon and succulent shrimp over a generous bed of buttery herb pasta. Garnish with additional chopped parsley for a finishing touch. Enjoy your magnificent meal immediately.
