If you’re craving something sweet and tropical, this Hummingbird Bread with Cream Cheese Frosting is just the ticket! 🍌🍍🥜✨
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup crushed pineapple, drained
- 2 ripe bananas, mashed
- 1/2 cup chopped pecans
- 4 oz cream cheese, softened
- 2 tablespoons unsalted butter, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Directions:
1. Preheat your oven to 350°F (175°C) and grease up a 9x5-inch loaf pan with some flour.
2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set this dry mixture aside for later.
3. In a larger bowl, combine the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix it all up until it’s nice and smooth.
4. Stir in the crushed pineapple and mashed bananas until everything is well combined.
5. Gradually fold in your dry ingredients, mixing just until blended. Don’t overdo it! Gently fold in the chopped pecans for a little extra crunch.
6. Pour the batter into your prepared loaf pan and pop it in the oven. Bake for about 50-55 minutes or until a toothpick poked in the center comes out clean.
7. Once it’s done, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
8. Meanwhile, whip up the cream cheese frosting by beating together the softened cream cheese, butter, powdered sugar, and vanilla until it's smooth and creamy.
9. Once the bread is completely cooled, spread that delicious cream cheese frosting generously across the top.
10. Slice it up, serve, and enjoy this sweet treat!
