I behaved myself and waited til it was done before peeking & it shows!

I want to get in the habit of making bread weekly (or at least having it in the freezer to thaw as needed).

I’ve made 4 lbs of bread in the past 2 weeks…so far so good 😊

I made Outbacks Alice Springs Chicken tonight with steamed broccoli.

2.5 lb bag chicken breast tenderloins
Lowry’s Seasoning Salt
6 bacon slices
1/4 cup regular mustard (I used Dijon)
1/3 cup honey
2 Tbsp. Mayonnaise
2 teaspoons dried onion flakes
1 cup sliced fresh mushroom (I omitted)
2 cup shredded Colby/Jack cheese (I used 1 cup)

First, Sprinkle and rub the chicken breasts with seasoning salt. Cover and refrigerate for 30 minutes.
While the chicken is in the refrigerator, cook bacon in a large skillet until crisp. Remove bacon and set aside.
Saute chicken in the bacon grease for 3 to 5 minutes per side, or until browned. Place chicken in a 9″ × 13″ casserole dish or pan.

To make the Honey Mustard: In a small bowl, mix the mustard, honey, mayonnaise and dried onion flakes.
Spread some of the Honey Mustard over each piece of chicken, then layer with mushrooms, crumbled bacon, and shredded cheese.
Bake in a 350° oven for 30 minutes, or until cheese is melted and chicken is done.

Yesterday I bought this family meal deal at Chipotle for us to eat on a couple of days. It’s a busy week and I thought it would help take something off my plate and give us a new healthy option.

It was $50 for:

Large chicken
Large Rice
Large Beans
Lettuce
Sour cream
Cheese
Large Guacamole
Large chili corn salsa
Large pico tomato salsa
10 tortillas
Large bag of chips

It’s very good and we have lots of options: taco salad, soft tacos, burrito rice bowl, quesadillas, etc.

Have I mentioned how sweet our church folks are?

It’s a normal occurrence to have vegetables in the foyer that members have brought to share with those who want them, or roses in a vase from a precious lady’s garden that she brings to share. I’ve even seen a tailgate let down in the parking lot with extra vegetables from someone’s garden with some plastic bags so people can get what they want.

It’s also common for them to call or text and check on you if you miss church. If you need it, they will even bring you a meal.

I got a delicious coconut pie last week, and after the Sunday morning service this week a sweet elderly man gave me some okra.

They are faithful to pray for you, and treat everyone like a friend.

They are concerned about reaching the lost. There is a sweet spirit of humility among the members.

These things (as precious as they are) aren’t even the half of it. If you are local to Cullman, I can recommend a great church!
