Gastroparesis friendly creamy chicken noodle with rotini:
Recipe:
Ingredients
16 oz Rotini noodles (or any noodle you prefer)
Cooked Chicken: 3 boneless skinless chicken breasts shredded
Chicken Broth: 4 cups
Cream of Chicken Soup: 4 small cans (or cream of mushroom for variation)
Butter: 1/2 cup
Onion: 1 small (chopped, optional)
Garlic: 2 cloves (minced, optional)
Salt & Pepper: to taste
Instructions:
*Boil the chicken breasts in a large pot using the chicken broth adding water as needed. Don't forget to season your chicken before hand. I also like to add some of the seasoning to my broth. If you have to add more water than expected add a chicken bullion cube per cup of water you add. After your chicken has boiled about 45 mins pull it out of the broth into a big bowl to shred. LEAVE THE SEASONED BROTH. you need it for the next step.
*Cook the Noodles: Add your uncooked pasta to the boil broth mixture. Allow pasta to cook according to box instructions. Again if more water is needed just make sure to taste and season. Combine your butter in with the cooking patsa.
*Combine your cream of chicken cans and your shredded chicken to the pot once the noodles have finished cooking. Bring it to a gentle boil.
*Let it simmer for about 5-10 minutes, allowing the flavors to meld together.

Homemade Dirty Mashed Potatoes:
*Boil 5-6 large potatoes diced into large chunks with skin still on. Make sure you wash your potatoes before boiling. Boil for about 30-60 minutes depending on how many you use and how big they are. Around 30 minutes stick a fork into them to see if they are done. The fork should go through the potato without much resistance.
*Drain potatoes, return them to a large bowl or your pot and mash them up.
*Add a half cup of butter (or honestly however much you feel you want)
*Add half a cup of milk (again use how much you feel you need to get the taste and consistency you prefer.)
*Mix till desired consistency.

Serve: Enjoy side by side on a plate or mix it all together in bowl. Add some rolls to the side and dinner is a hit! I hope you enjoy and remember this is a Gastroparesis friendly meal! Feel free if you aren't on dietary restrictions to adjust seasons to your liking.

Hi all! My name is Brittany and I'm creating this cooking space to provide recipes and share frustrations! I will be cooking meals that revolve around diabetic diets, gastroparesis diets, and renal diets. That doesn't mean that I will not branch out though! Do not ever hesitate to request that I make a video for any chronic health issue! I want to help as many people as I can that have harsh dietary restrictions! ?Because trust me I understand how frustrating and heartbreaking it can be to go from eating whatever you want to having major restrictions! My goal is to help people make food that still tastes amazing but follows strict diets and believe me its hard to tell the difference! I am a 420 friendly page as well considering that it is very helpful with a lot of my own personal health issues! While I'm first starting off and getting used to everything I will be posting written recipes with pictures. I promise videos will soon follow suit!!! So please enjoy and feel free to bring suggestions and stories! I'd love to know more about the people im trying to help!
