🚨 It's going to be a busy weekend in the One Italian Girl kitchen! I have been really busy at work but I’m going to devote tomorrow to a trip to the gym and a day in the kitchen!
The grocery haul is in, the fridge is full, and I've got a whole lot of deliciousness planned. Fresh basil, arugula, spinach, colorful peppers, tomatoes, feta, roasted peppers, fresh bread... and yes, even a watermelon made its way into the cart! 😋
There are several recipes hiding in this photo, and I can't wait to share them all with you. Let's see who can guess the most! Bonus points if you can spot a few ingredients that give the recipes away.

15-Minute Weeknight Thai Chicken Meatball Bowl 🍜🌶️…the beautiful finished product is at the end of the video.

Some nights call for homemade, and some nights call for smart shortcuts. This easy weeknight Thai-inspired bowl came together in just 15 minutes thanks to a few quality convenience items that did all the heavy lifting!
Tender chicken meatballs, rice noodles, and a flavorful bone broth base are paired with fresh zucchini noodles, crisp red peppers, a squeeze of lime, and a drizzle of sriracha for the perfect balance of comfort and freshness. While I leaned on a few prepared ingredients, the end result is still packed with protein, vegetables, and wholesome flavor.
Proof that healthy dinners don't have to take hours—or leave your kitchen looking like a disaster zone. Sometimes the best recipe is knowing which shortcuts are worth taking!

Looking out the back window this morning and eyeing up my wonderful neighbor Marlena‘s lovely garden…. in anticipation of when her zucchini is ready to be picked! I can’t wait to make this delicious zucchini recipe… 

ZUCCHINI GROWING FASTER THAN YOU CAN FIGURE OUT WHAT TO DO WITH IT?
Try air fryer zucchini! Simple, less greasy than its fried counterpart, and delicious!

AIR FRYER “FRIED” ZUCCHINI PLANKS
INGREDIENTS:
• 4 small-medium zucchini, sliced into planks
• 1 cup of flour
• 1 cup of panko bread crumbs
• 1/3 cup grated Parmesan
• 3 eggs, beaten
• Olive oil spray
• Salt and pepper to taste
DIRECTIONS:
• Mix the panko, Parmesan, salt, and pepper together in a bowl
• Dredge the zucchini in the flour and shake off excess
• Dip the zucchini in the egg and let excess drip off
• Press the zucchini into the panko mix so that both sides are evenly coated
• Put tinfoil on the air fryer trays, and then place the zucchini planks on the tinfoil and spray with the olive oil. Flip and spray the other side.
• Cook for about five minutes at 400°. Then flip and cook for another 4 to 5 minutes until the zucchini is golden brown
• Optional… Sprinkle the zucchini with additional fresh grated Parmesan

This Chinese Chicken Salad is packed with crisp cabbage, crunchy veggies, tender chicken, and plenty of texture in every bite. The sweet-and-savory dressing pulls everything together for a fresh, flavorful meal that's hearty enough for lunch or dinner. I added some sliced egg rolls (from Aldi) onto the top of the salad to make it a little more fun.
It's one of those recipes that's perfect for meal prep, easy to customize, and even better after the flavors have had a little time to mingle. Healthy, colorful, and loaded with crunch—what's not to love?

I’ve always believed that food is so much more than what’s on the plate… it’s memories, traditions, and the people we share it with—especially if you’re Italian. ❤️
For many years, my youngest daughter’s birthday dinner request never changed: Chicken Parmesan, linguine, a big salad, and plenty of garlic bread. Every year, this wonderful group of girls would gather around our table to celebrate, laugh, and make memories together.
Today, they’re all grown up, building careers, and scattered across the country, but they’ve remained friends through it all. And every time I make Chicken Parmesan, I’m reminded of those birthday dinners, a house full of happy teenagers, and the simple joy of feeding the people you love.
