Kitchen Shenanigans!🍗

Last night I turned chicken breasts into crispy bites of happiness...

I love a good chicken tender & the crisper the better!

Now my first choice would be fried chicken tenders, mmmmmm makes my mouth water just thinking about it BUT (no pun intended here 😏) my rather round rump does not need any of that fried goodness, so these beauties are air fried & come out absolutely crunchy delicious!

Here's what I do:

💫Rinse & pat dry chicken breast

💫Place chicken breast in zip lock to pound out evenly (this helps them cook more evenly)

💫Slice the breast to what ever size you want or leave whole, it's your chicken your rules 😉

💫Place three shallow bowls next to each other, give each their one fork

💫Your 1st bowl will have flour, second bowl buttermilk or egg (again your chicken your rules) 3rd panko

💫Season the flour & panko, (measure with your heart, I use quite a bit of each) smoked paprika, oregano, slap ya mama, onion powder, Kinders Woodfired Garlic, black pepper

💫Dip each tender in the seasoned flour, buttermilk or egg, seasoned panko, use 1 fork for the flour, 1 for the buttermilk/egg, 1 for the panko if not you will have a sticky icky mess.

💫Once your tenders are all battered up place in your airfryer basket, spray with avocado oil flip each one & spray the other side. Air fry on 380° each side about 6 minutes.

While we could eat all of these scrumptious tenders in one night we stay strong & save some for the next day, they crisp up beautifully with just a few minutes back in the air fryer. We toss them in a salad or chicken wrap!

Kitchen Shenanigans!!

YA'LL these donuts were such a yummy treat yesterday morning! 🍩🍩🍩

These mouth watering, delicious, chocolate donuts are FABULOUS & that chocolate frosting 🤌💋
They are baked not fried & have a wonderful texture.
I added a good sprinkle of crunched toffee on top so good!

I do not claim to have a green thumb but I do manage to keep a few plants alive so maybe I have a green pinky 😆

Our Basil always does really well & we always have so much of it, we have 2 of these huge plants, we should have transfered them to bigger pots the poor things are a bit cramped in these little ones.

Our oregano has come back every year for going on 4 years in this same pot!

A few things we do with our herbs:

🌟mix with olive oil + garlic, we use this to dip some of my sourdough bread in, our discard pizza crust, I added some to our brown rice last night to jazz it up a bit, there are so many things to do with this oil.

🌟 Terry uses the herbs + garlic to make a compound butter, again so many uses for this herby butter, he used it on our grilled fish last night 😋

🌟 And of course using that lovely basil to make delicious bruschetta, top those little beauties with some balsamic & 🤌💋

What fresh herbs do ya'll grow & what other uses do you have for an abundance of basil???
