Chocolate Batter Swirl

1/2 cup natural cocoa powder, 50 g
1/2 cup hot water or hot coffee, 120 ml
3 tablespoons granulated sugar, 40 g
2 tablespoons melted butter, 28 g

Frosting

1 1/2 cups chopped chocolate, 255 g
1 cup heavy cream, 240 g
6 cups powdered sugar, 720 g
1 cup unsweetened cocoa powder, 85 g
2 cups unsalted butter, room temperature, 454 g
1 tablespoon vanilla extract, 15 g

How to make it

Preheat the oven to 350°F (175°C).
Grease and line three 8-inch cake pans with parchment paper.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Beat the butter in a stand mixer for 1 minute. Add the sugar and beat for another 3 minutes at medium-high speed, until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Mix in the vanilla.
Add the sour cream and mix until combined.
Add the flour mixture in 3 additions, alternating with the milk. Stop mixing as soon as the flour is incorporated.
In another large bowl, combine the cocoa powder, hot water or hot coffee, sugar, and melted butter.
Add 1 3/4 cups of the vanilla batter and gently whisk until combined.
For the frosting, place the chopped chocolate in a heatproof bowl.
Heat the heavy cream in the microwave or a small saucepan until steaming, but do not let it boil.
Pour the hot cream over the chocolate and let it stand for 1 to 2 minutes.

Blueberry Chantilly Frosting

10 tablespoons butter, room temperature
8 oz full-fat block cream cheese, 226 g, slightly softened
1 1/4 cups powdered sugar, 150 g
2 teaspoons vanilla extract
2 1/4 cups heavy whipping cream, 540 ml, very cold
1/2 cup thick blueberry sauce, 120 ml, chilled

Decoration

1 cup fresh blueberries
Fresh oregano leaves, optional

How to make it

Add the blueberries, sugar, and lemon juice to a large saucepan. Cook over medium-high heat, stirring occasionally, until the berries release their juices and the mixture reaches a boil.
Lower the heat to medium-low. Cook for 25 to 35 minutes, stirring occasionally and gently crushing the softened berries until the mixture darkens, reduces, and thickens.
Remove from the heat and carefully blend until smooth using an immersion blender or regular blender.
Strain the blueberry mixture through a fine-mesh strainer, pressing firmly to extract the liquid and pulp. Discard the remaining skins and seeds.
Return the strained sauce to the saucepan.
Stir the cornstarch and water together until smooth. Add it to the blueberry sauce and cook over medium heat, stirring constantly, until gently boiling and thickened, about 1 to 2 minutes.
Transfer the sauce to a bowl, press plastic wrap directly onto its surface, and cool to room temperature. Refrigerate for several hours until completely cold. Reserve 1/2 cup for the frosting and keep the rest for the cake.
Preheat the oven to 350°F (180°C). Grease a 9 × 13-inch metal baking pan and line the bottom with parchment paper.
Wash and thoroughly dry the blueberries.

Bake for 40 to 45 minutes, until the center springs back when gently pressed and a toothpick inserted away from a blueberry comes out clean or with a few moist crumbs. The center should reach about 205°F (96°C).
Cool the cake in the pan for at least 30 minutes.
Whisk together the whole milk and sweetened condensed milk.
Once the cake is mostly cool, poke holes all over it with a fork or wooden skewer.
Slowly pour the milk mixture over the cake, letting it soak into the holes. Use a brush to distribute it evenly.
Cover and refrigerate overnight.
Spread the remaining blueberry sauce evenly over the chilled, soaked cake.
Refrigerate for 20 to 30 minutes so the blueberry layer stays distinct beneath the frosting.
For the frosting, beat the softened butter for 30 seconds.
Add the cream cheese and beat for about 1 to 2 minutes, scraping the bowl well until completely smooth.
Add the powdered sugar and vanilla. Beat on medium speed until smooth and slightly fluffy.
Mix in the chilled 1/2 cup blueberry sauce until evenly incorporated.
In a separate clean bowl, whip the very cold heavy cream until medium-firm peaks form. Do not overwhip.
Fold about one-third of the whipped cream into the blueberry cream cheese mixture.
Gently fold in the remaining whipped cream in two additions, taking care not to deflate it.
Continue folding just until the frosting is smooth, fluffy, and evenly combined. Use immediately.

How to make it

• Process the graham crackers into fine crumbs. Add the granulated sugar and pulse a few times to combine.
• With the food processor running, slowly pour in the melted butter until all the crumbs are evenly moistened.
• Press the crumb mixture firmly across the bottom and halfway up the sides of the springform pan using the bottom of a cup.

For the Crust

1 1/4 cups chocolate cookie crumbs
5 tablespoons butter, melted

For the Chocolate Cheesecake

32 oz cream cheese, at room temperature (four 8 oz. packages; 2 lbs total)
1 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla extract
2 cups semi-sweet chocolate chips
1/4 cup espresso, freshly brewed, then cooled to room temperature
1/4 cup heavy cream, at room temperature
4 large eggs, at room temperature

How to make it

For the Crust

Position the oven racks in the center and preheat the oven to 350°F.
Coat a 9-inch springform pan with non-stick cooking spray. Line the bottom and sides with parchment paper, then spray the parchment as well. Set aside.
Combine the chocolate cookie crumbs and melted butter in a medium bowl until evenly mixed and the texture resembles damp sand.
Press the crust firmly across the bottom and halfway up the sides of the springform pan using the bottom of a measuring cup.
Bake for 7 minutes, then remove from the oven and set aside.

For the Chocolate Cheesecake

Lower the oven temperature to 325°F.
Place the chocolate chips in a small glass bowl and microwave in 20-second intervals, stirring after each interval until completely melted and smooth. Set aside to cool slightly.
Beat the cream cheese in a large bowl or stand mixer for about 30 seconds, until smooth.
Scrape the sides and bottom of the bowl. Add the granulated sugar and vanilla, then sift in the cocoa powder and mix again.
Add the melted chocolate chips, room-temperature espresso, and room-temperature heavy cream. Mix until combined.
Scrape the sides and bottom of the bowl, then briefly mix again until there are no lumps.
Crack the room-temperature eggs into a small bowl and beat until well scrambled.
With the mixer running on low, slowly pour the eggs into the cream cheese mixture. Stop mixing as soon as the eggs are incorporated.
Remove the bowl from the mixer and scrape the sides and bottom again. Make sure the batter is completely smooth. If a few small lumps remain, gently fold them in with a rubber scraper.
Tap the bowl against the counter for 30–45 seconds to release as many air bubbles as possible. You should see bubbles popping across the surface.
Pour the filling directly over the baked crust in the springform pan.
Bake at 325°F for 30 minutes.
Reduce the temperature to 250°F and bake for another 45 minutes.
Turn off the oven and leave the cheesecake inside for another 30 minutes without opening the oven door.
Crack the oven door and allow the cheesecake to cool slowly inside for 1 hour before removing it.
Let the slightly warm cheesecake come to room temperature on the counter for about 3 hours.
Cover with plastic wrap and refrigerate for 2 hours, or until ready to serve.
If desired, garnish with fresh berries, homemade whipped cream, or chocolate shavings. Slice and serve.
