Cozy up with this Smoky Jalapeño Popper Meatloaf featuring a creamy filling and a zesty ranch drizzle—perfect comfort food! 🌶️🥩
Ingredients:
- 1.5 lbs ground beef
- 1 egg, beaten
- 1/2 cup breadcrumbs
- 1/2 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 2 jalapeños, diced (seeded for less heat)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1/2 cup ranch dressing
- 1 tbsp sour cream
- 1 tsp fresh parsley, chopped
Directions:
1. In a small bowl, combine the softened cream cheese, shredded cheddar cheese, and diced jalapeños. Set it aside while you prep the rest.
2. In a large mixing bowl, mix together the ground beef, breadcrumbs, beaten egg, smoked paprika, garlic powder, salt, and pepper. Stir until just combined; don't overmix!
3. Grease a loaf pan and press half of the meat mixture evenly into the bottom. Then, spread the cheesy jalapeño filling over this layer. Top it off with the remaining meat mixture, sealing the edges to ensure that tasty filling stays inside.
4. Preheat your oven to 375°F (190°C). Pop the meatloaf in the oven and bake for about 50-60 minutes, or until the internal temperature hits 160°F (71°C).
5. While that delicious meatloaf is baking, whip up the ranch drizzle by whisking together the ranch dressing, sour cream, and chopped parsley in a small bowl.
6. Once your meatloaf is done, let it rest for 5-10 minutes before slicing. Drizzle the creamy ranch sauce generously on top and dig in!
