Ice Cream Chocolate Log Recipe
Ingredients:
For the chocolate shell:
300 g milk chocolate (or dark chocolate if you prefer)
2 tbsp coconut oil or vegetable oil (helps the chocolate set smoothly)
For the filling:
1 liter vanilla ice cream (or any flavor you like — coffee, caramel, hazelnut work great)
1 chocolate sponge cake or brownies crumbs (optional, for bottom layer)
For topping:
Crushed nuts (almonds, hazelnuts, or peanuts)
Chocolate chips or curls
Coffee beans or cocoa nibs (optional, for decoration)
Instructions:
Prepare the chocolate shell
Melt the chocolate with coconut oil using a double boiler or microwave (30-second intervals, stirring each time until smooth).
Line a loaf pan with parchment paper or plastic wrap.
Pour half of the melted chocolate into the pan. Use a spoon to spread and coat the entire inside. Freeze for 5–10 minutes until firm.
Add the remaining melted chocolate and repeat for a thicker shell. Freeze again.
Add the ice cream
Let the ice cream soften slightly at room temperature (5–10 minutes).
If using cake/brownie crumbs, press a thin layer on the bottom of the chocolate shell.
Spoon softened ice cream into the chocolate shell, pressing gently to avoid air pockets. Smooth the top.
Seal & freeze
Drizzle a thin layer of chocolate on top to “close” the log (optional but helps hold shape).
Cover with plastic wrap and freeze for at least 4–6 hours (overnight is best).
Unmold & decorate
Gently lift the log from the pan.
Sprinkle with nuts, chocolate chips, and cocoa nibs.
Drizzle extra melted chocolate if desired.
Tips & Variations
Flavors: Try pistachio, coffee, hazelnut, or caramel ice cream.
Crunchy inside: Add crushed cookies or wafers in the middle.
Festive look: Add fruit (raspberries, strawberries) before serving.
