So started getting into bodybuilding… as you know that means increasing how much you eat, usually with an emphasis on carbs and protein.

With all that in mind, here’s a great vegan dish I made for dinner yesterday. Only took about 15 minutes. Pretty simple - olive oil and tomato sauce in the frying pan, followed by various spices, and then you just add in mixed vegetables. Have some spaghetti cooking on the side. Towards the end, add in the tofu and there you go :)

Just got back from the temple and I was so hungry. With bedtime coming up soon, I thought of this quick and easy dish.

There’s nothing that special about it, but it came out way more tasty than expected!

Being literally just some fried vegetables and tofu - this is very healthy, it’s also vegan.. and a little bit of spice makes a world of difference.

I just fried some mixed vegetables in olive oil, adding oriental curry powder, rosemary, oregano, and some salt. That’s literally it, it came out fantastic.

You just throw that on a tortilla and add some chopped tofu… Your dinner is done in five minutes :)

I don’t know why I keep making this on Tuesday, it just happened 🤷🏽‍♂️

One of my favorite dishes though, the green spinach curry. I first tried it at temple, made the original way…

but with some advice from a sanatani friend 🙏🏽 I made this using tofu and coconut oil (last time I used potatoes 🥲😂).

And as always,
Xioti + roti 🐶💙

Every time I try to make cashew milk, I can’t stop myself from going smoothie!

However, this smoothie is very light. Great for morning, there’s only two actual solid ingredients – cashews and dates.

The tahini and coconut oil help add some great flavor, as well as providing more fat and protein in your drink (vegan milk is often low in fat/protein).

I definitely recommend research into the added powders - Shilajit, Maca, and Ashwagandha. I’ve been using these for a couple years now and they have been great.

What I love about a plant-based lifestyle is that all the ingredients are satvic! Compared to using regular milk, I feel way more energized with the nuts :)

This bowl was so easy to make, came out delicious, and is super healthy!

We simply boiled some rice, added frozen corn, and put that in a bowl. Then we added some steamed broccoli, tofu, shredded carrot, and jalapeños. All of this was done without any planning - I just do it :)

To finish the dish, we topped it with some grounded spicy peppers and teriyaki sauce - creating a mix of sweet and spicy flavor.

To share about my switch to vegan, I’ve practically been living vegan as part of my natural lifestyle - with the exception of milk and fish, for a long time. Switching fish with tofu is super easy and convenient.

As for milk, I simply switched it with cashew milk. Cashews are my favorite nut and they are so easy to turn into milk. Simply soak them for a few hours and blend them - super easy!

Kind of new to this advanced form of quesadilla, didn’t really read instructions.. pictures were interesting.

Came out absolutely amazing! Kind of taste like spanakopita - but with spice and Mexican cheese :)

Here’s what I did:
Ghee on the pan, Cook the tortilla. Flip as usual - add the cheese, the greens, and I added jalapeños.

put another tortilla on top, pressed down to let the cheese melt. The skilled part here is the next flip - Best of luck.

after a couple more flips, at the right amount of crunch, you’re done with the quesadilla.

chopped up some avocados, cleaned the pan, and moved on to the sauce. Just made my typical curry with a little extra basil.

Now that I started bodybuilding, I tried thinking of creative vegetarian dishes (aside from eating fish 🐟).

Beans and rice are an old secret to protein!
This was super easy to make and delicious.

I just prepared rice. Then, after making the curry base, just added pinto beans, black beans, corn, and broccoli.

Delicious, healthy, and simple :)

No cookbook needed, this salmon fish soup was creative and simple!

started off with boiling some chopped up salmon. Then added chopped up carrots, celery, leek, and tofu - Super simple ingredients!

Then added the spices, which included curry powder, basil, oregano, ROSEMARY* (important), ginger, paprika, an some salt. I also added a dash of some general salmon spice mix, just to be accurate here.

Now the amount of each spice added really comes from experience, and depends on you. In the case of soup, I think having a decent amount of ginger can really help add heat to the soup, something I came to appreciate when I tried spicy Chinese soup in NYC. But with fish, Rosemary is also very important. And personally, I go the biggest on the curry powder - putting like six big dashes.

To finish off this dish at the end, I added a DROP of some teriyaki, sushi vinegar, and a half slice of lemon squeezed.

this dish really has no name, but I hope it ends up in a diner named Kambouras Kitchen, sometime in the next five years :)

Was in a rush to business class, so made this one quickly!

When I saw there wasn’t any salsa left, I made a curry version instead. It was fairly simple and easy, because I was already cooking in ghee.

My on the spot recipe was ghee, chopped tomato, curry powder, rosemary, and basil. I also mixed in some organic ketchup and hot sauce to compensate for in the ingredients I missed in my rush. And I must say - this came out way better than store-bought salsa! The curry adds a whole other flavor :)
