Aurora Lemon Blueberry Crystal Bombs with Cream Core

Ingredients

For the Lemon Blueberry Mousse:

12 oz cream cheese, softened

1/2 cup granulated sugar

1/4 cup blueberry purée, strained

1 tbsp lemon juice

1 tsp lemon zest

1 1/2 tsp gelatin powder bloomed in 2 tbsp cold water

1/2 cup heavy cream, whipped to stiff peaks

For the Sweet Cream Core:

1/2 cup heavy cream

2 tbsp sweetened condensed milk

1/2 tsp vanilla extract

1/2 tsp gelatin powder bloomed in 1 tbsp water

For the Aurora Crystal Glaze:

3/4 cup granulated sugar

1/2 cup sweetened condensed milk

1/2 cup water

1 cup white chocolate chips

1 tbsp gelatin powder bloomed in 1/4 cup water

1 drop violet food coloring

1 drop sky blue food coloring

1/2 tsp edible silver luster dust

For Garnish (optional):

Fresh blueberries

Micro-mint leaves

Directions

Whisk 1/2 cup heavy cream, condensed milk, and vanilla for the core; melt the small portion of bloomed gelatin and stir it in.

Pour the cream mixture into mini hemisphere molds and freeze for 3 hours until solid.

Beat cream cheese and sugar until smooth, then incorporate the blueberry purée, lemon juice, and lemon zest.

Melt the larger portion of bloomed gelatin and stir it into the blueberry lemon base before gently folding in the whipped cream.

Fill large sphere molds halfway with the mousse, press a frozen cream core into the center, and cover with remaining mousse to seal.

Freeze the bombs for at least 6 hours until rock solid.

Prepare the glaze base by simmering sugar, water, and condensed milk; remove from heat and stir in the remaining bloomed gelatin and white chocolate chips.

Divide the glaze into two bowls; tint one violet and one blue, then add silver luster dust to both.

Combine the colors slightly in a single pitcher to create a marbled "aurora" effect, emulsify briefly with an immersion blender, and let cool to 90°F.

Remove frozen bombs from the molds, place them on a wire rack, and pour the marbled glaze over them in a slo

Blueberry Swirl Cheesecake

Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1/4 cup heavy cream

For the Blueberry Swirl:

1 1/2 cups fresh blueberries

1/4 cup granulated sugar

1 tablespoon lemon juice

Directions:

Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and set it aside.

To make the crust, combine graham cracker crumbs, sugar, and melted butter in a medium bowl. Stir until the mixture is well combined.

Press the mixture into the bottom of the prepared springform pan to form an even layer. Bake for 8-10 minutes until golden and set. Remove from the oven and set aside to cool.

For the cheesecake filling, beat the softened cream cheese and sugar together in a large bowl until smooth and creamy.

Add the vanilla extract, eggs (one at a time), sour cream, and heavy cream. Mix until fully combined and smooth.

For the blueberry swirl, combine fresh blueberries, sugar, and lemon juice in a saucepan over medium heat. Cook for 5-7 minutes, stirring occasionally, until the blueberries break down and form a thick sauce.

Remove from the heat and let the blueberry sauce cool slightly.

Pour the cheesecake filling over the cooled crust in the springform pan. Drop spoonfuls of the blueberry sauce over the cheesecake and use a knife to swirl the sauce into the filling, creating a marbled effect.

Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake in the oven for 1 hour to cool gradually.

Once cooled, refrigerate the cheesecake for at least 4 hours or overnight before removing from the springform pan.

Pistachio Tiramisu

Ingredients:

1 ½ cups shelled pistachios, chopped

1 cup mascarpone cheese, softened

1 cup heavy cream

½ cup powdered sugar

1 teaspoon vanilla extract

2 cups strong brewed coffee, cooled

1 tablespoon coffee liqueur (optional)

2 cups ladyfinger biscuits (savoiardi)

2 tablespoons unsweetened cocoa powder

2 tablespoons chopped pistachios for garnish

Directions:

In a food processor, pulse the pistachios until finely ground. Set aside.

In a large mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whisk until smooth and creamy.

Add the ground pistachios to the mascarpone mixture and mix until well incorporated.

In a shallow dish, combine the brewed coffee and coffee liqueur (if using). Dip each ladyfinger into the coffee mixture for about 1 second per side, making sure they are not soaked.

Arrange the dipped ladyfingers in the bottom of a 9x9-inch square dish or a similar size serving dish.

Spread half of the pistachio mascarpone mixture over the ladyfingers, smoothing the top with a spatula.

Repeat the layers, dipping the remaining ladyfingers in the coffee mixture and adding the rest of the mascarpone mixture on top.

Cover and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld together.

Before serving, dust the top with unsweetened cocoa powder and garnish with chopped pistachios.
