🥑🍌 Avocado & Banana Mini Pancakes (Avocado Banana Syrniki)
Creamy, golden, and packed with protein, healthy fats, and natural sweetness — these mini pancakes are a fun twist on classic syrniki and make the perfect nourishing breakfast.

You will need:
• 1 ripe banana
• 1 ripe avocado
• 1 lb (450 g) farmer’s cheese or cottage cheese
• 1 egg
• 1 cup flour (plus more if needed and for shaping)
• 1 tsp vanilla
• Oil spray, for cooking
• Honey (optional, for serving)

Mash the banana and avocado until smooth and creamy. Add the farmer’s cheese, egg, and vanilla. Mix very well until fully combined.
Gradually add the flour and mix until you get a thick, workable dough. Depending on how moist your cheese is, you may need to add a little more flour until the dough holds its shape and is easy to handle.
Lightly flour your work surface. Take a spoonful of dough and place it onto the floured board. Dust lightly with flour and gently shape with your hands into a small round pancake.
For perfectly even circles, place a cup over the dough and rotate it gently in a circular motion to shape.
Lightly spray a pan with oil and heat over medium to low heat. Cook the pancakes for about 4 minutes on each side, covered, until golden brown and cooked through.
Serve warm — creamy and tender inside, golden on the outside. Drizzle with honey if you like.
