🍗 2 cups chicken stock (or as needed to cover)

🫒 ½ cup sliced black olives

🌶️ ¼ cup chopped pimento peppers

🔥 Directions
Preheat the oven to 350°F (175°C).

Brown the Chicken: Heat vegetable oil in a Dutch oven over medium heat. Cook and stir chicken pieces until browned (5 to 10 minutes). Remove chicken with a slotted spoon and place it on a plate.

Sauté the Veggies: In the same Dutch oven, cook and stir onion, green bell pepper, minced garlic, and whole garlic cloves until the onion softens (about 5 minutes).

Combine Ingredients: Return chicken to the Dutch oven. Add tomatoes, rice, salt, oregano, black pepper, and bay leaf. Pour in enough chicken stock to cover all the ingredients.

Bake: Bake the chicken and rice mixture in the preheated oven until the rice is tender, and the chicken is no longer pink and the juices run clear (about 1 hour and 30 minutes). The chicken’s internal temperature should reach 165°F (74°C) when tested with an instant-read thermometer.

Add Final Ingredients: Stir in peas, olives, raisins, and pimento peppers into the chicken-rice mixture. Bake for an additional 15 minutes until everything is warmed through.
