🍗 Boursin Chicken, Mushroom, and Asparagus Skillet
This flavorful skillet features tender chicken, savory mushrooms, fresh asparagus, and creamy Boursin cheese in a rich sauce. Serve over mashed potatoes or rice, with a side salad for a complete meal.

🛒 Ingredients
1 1/2 to 2 pounds chicken tenders
Salt and freshly ground black pepper, to taste
1 1/2 tablespoons unsalted butter
1 1/2 tablespoons olive oil
1/2 cup thinly sliced shallots
8 ounces mushrooms, cleaned and sliced
2 cloves garlic, minced
1 teaspoon herbes de Provence
1/3 cup chicken stock
1/3 cup dry white wine
2 cups bite-sized asparagus pieces
1 (5.2-ounce) package soft French cheese, such as Boursin® Shallot and Chive Cheese, roughly chopped
Fresh snipped chives for garnish (optional)
🍽️ Directions
Prepare Chicken
Pat chicken tenders dry with paper towels and season with salt and pepper.
Sear Chicken
In a large nonstick skillet, melt butter with olive oil over medium heat. When sizzling, add chicken tenders and cook until browned, about 2-3 minutes per side. Transfer to a plate and keep warm.
Cook Vegetables
Add shallots to the same skillet, stirring for about 30 seconds. Add mushrooms and cook until softened, about 2 minutes. Stir in garlic and herbes de Provence, cooking for another 30 seconds.
Add Liquids and Asparagus
Pour in chicken stock and white wine, stirring well. Add asparagus and a pinch of salt.
Finish Chicken
Place chicken tenders back in the skillet, along with any accumulated juices. Reduce heat to medium-low, cover, and cook until the chicken is no longer pink and juices run clear, about 5 minutes (internal temperature should reach 165°F/74°C).
Add Boursin Cheese
Turn off heat, add Boursin cheese, and stir until melted into the sauce. Garnish with fresh chives if desired, and serve warm.
