Ingredients

1 lb ground beef or turkey

1 onion, chopped

2 cloves garlic, minced

4 cups beef broth

1 can (15 oz) tomato sauce

1 can (14.5 oz) diced tomatoes

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

8 oz broken lasagna noodles

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Instructions

In a large pot, brown the ground beef or turkey with the chopped onion and garlic over medium heat. Drain excess fat.

Add beef broth, tomato sauce, diced tomatoes, Italian seasoning, and red pepper flakes (if using). Bring to a boil, then reduce to a simmer.

Stir in the broken lasagna noodles and cook for 10-12 minutes, until the noodles are tender.

2 cups fresh rhubarb, chopped

2 cups fresh strawberries, sliced

1 1/2 cups sugar

1/4 cup cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 package (2 crusts) refrigerated pie crusts

Instructions

Preheat the oven to 375°F (190°C).

In a bowl, combine rhubarb, strawberries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until well combined.

Roll out one pie crust and fit it into a 9-inch pie dish.
