Warm cinnamon spiced apple pie tacos tucked into crispy cinnamon sugar shells and finished with a swirl of whipped cream

👨‍🍳Apple Pie Tacos

4 medium apples, peeled and sliced
½ cup granulated sugar
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ cup water
12 6 inch flour tortillas
Oil for frying
½ cup cinnamon sugar
Whipped cream for serving
1 tablespoon cornstarch, optional
3 tablespoons water, optional

Place the apples, sugar, cinnamon, nutmeg, and ½ cup water in a saucepan. Stir until well combined. Cover and cook over medium heat for about 10 minutes, stirring frequently, until the apples are tender but still hold their shape. If the filling needs thickening, stir together the cornstarch and 3 tablespoons water until smooth, then stir it into the apples and cook until the sauce thickens. Heat about 1 inch of oil in a skillet over medium heat. Fold each tortilla in half and carefully lower the folded bottom into the hot oil for a few seconds to help form the taco shape. Fry one side until golden, then turn and fry the other side. Drain briefly on paper towels, then coat the warm shells with cinnamon sugar. Spoon the warm apple pie filling into each shell. Top with whipped cream and a light sprinkle of cinnamon sugar. Serve immediately.

Old fashioned banana cream pie layered with fresh bananas and a silky homemade custard that chills into pure comfort

👨‍🍳Old Fashioned Banana Cream Pie

1 9 inch pie crust, baked and cooled
3 cups whole milk
¾ cup granulated sugar
⅓ cup all purpose flour
¼ tsp salt
3 large egg yolks, lightly beaten
2 tbsp butter
1 tsp vanilla extract
3 bananas, sliced

Have the baked pie crust ready. In a large saucepan, heat the milk over medium heat until steaming and just beginning to bubble around the edges. Do not boil. In a separate saucepan, combine the sugar, flour and salt. Gradually whisk in the hot milk until smooth. Cook over medium heat, stirring constantly, until the filling thickens. Reduce the heat, cover and cook for 2 minutes longer, stirring occasionally. Slowly whisk a small amount of the hot filling into the beaten egg yolks to temper them. Gradually stir the egg yolk mixture back into the saucepan. Cook for 1 minute longer, stirring constantly. Remove from the heat and stir in the butter and vanilla until smooth. Let the filling cool until lukewarm. Arrange the sliced bananas evenly over the bottom of the baked pie crust, then pour the filling over the bananas and smooth the top. Refrigerate for at least 4 hours, or until completely chilled and set.
