Ingredients 🍍✨
* 1 whole fresh pineapple (thoroughly cleaned)
* 2–3 cinnamon sticks
* 1 teaspoon anise seeds
* 4–6 whole cloves
* ½ teaspoon black peppercorns
* 8-10 cups water (for boiling)
Step-by-Step Instructions 🍍🍵
1. Wash the pineapple very well.
2. Peel the pineapple and place the pineapple skin into a large cooking pot.
3. Cut the pineapple fruit into medium pieces.
4. Blend the pineapple pieces until smooth.
5. Strain the blended pineapple juice, then pour it into the pot with the pineapple skin.
6. Add the cinnamon sticks, anise seeds, cloves, black pepper, and enough water to cover.

Ingredients
* 4½ cups sourdough discard
* 2 large eggs
* 1 cup milk (or unsweetened almond milk)
* 1 cup whole wheat flour (or oat flour)
* 1–2 tablespoons honey or maple syrup (optional)
* 2 tablespoons olive oil (or melted butter)
* 1½ teaspoons baking soda
* 1 teaspoon baking powder
* 1 teaspoon salt
* 1 teaspoon cinnamon (optional)
* 1 teaspoon vanilla extract (optional)

Instructions

1. Whisk wet ingredients
Discard, eggs, milk, oil, vanilla.
2. Add dry (except baking soda)
Mix in flour, salt, cinnamon, baking powder.
3. Add baking soda last
Stir gently right before cooking—this is what makes them fluffy.
4. Adjust batter
* Too thick → add a splash of milk
* Too thin → add a bit more flour
5. Cook
* Medium heat, lightly greased pan
* ~¼ cup batter per pancake
* Flip when bubbles form (2–3 min), cook another 1–2 min

Optional healthy boosts

* Add 2–3 tbsp Greek yogurt for protein
* Add 2 tbsp ground flaxseed for fiber
* Use oat flour for a softer, slightly gluten-light version

Ingredients (Pastry)
•3 cups all-purpose flour (soft flour)
•16 tablespoons unsalted butter, at room
temperature
•⅓ cup cold water or milk
•½ teaspoon ground nutmeg
•1 teaspoon garlic powder
•1 teaspoon onion powder
•¼ teaspoon turmeric powder (optional)
•1 teaspoon salt
•4 medium eggs
•1 medium egg
Filling
•Any filling of your choice
Method
1. In a mixing bowl, combine the flour, salt, nutmeg, garlic powder, onion powder, and turmeric (if using).
2. Add the butter and rub it into the flour mixture until it resembles fine breadcrumbs.
3. Gradually add the cold water or milk and mix until a soft dough forms. Cover and let the dough rest for 15–20 minutes.
4. Prepare your preferred filling and allow it to cool completely.
5. Roll out the dough and cut into circles. Place filling on one side, fold over, and seal the edges with a fork.
6. Arrange the meat pies on a lined baking tray and brush the tops with egg wash for a golden brown color.
7. Bake in a preheated oven at 375°F (190°C) for 25–28 minutes, or until golden brown on top.
Allow to cool slightly before serving. Enjoy!
