Grilled Stuffed Calamari with Herb Butter
Ingredients:
For the Calamari:
4 large calamari tubes, cleaned
1 cup cooked rice or breadcrumbs
1/4 cup feta cheese, crumbled
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1 lemon (zested and juiced)
Salt and black pepper, to taste
Olive oil, for grilling
For the Herb Butter:
4 tbsp unsalted butter
2 cloves garlic, minced
1 tbsp fresh thyme leaves
1 tsp chili flakes (optional)
Salt and black pepper, to taste
Instructions:
Prepare the Filling:
In a bowl, mix cooked rice (or breadcrumbs), feta cheese, garlic, parsley, dill, lemon zest, and a squeeze of lemon juice.
Season with salt and black pepper to taste.
Stuff the Calamari:
Carefully stuff the calamari tubes with the prepared filling, leaving a little room at the top.
Secure the open ends with toothpicks to keep the filling inside.
Grill the Calamari:
Preheat a grill or grill pan to medium-high heat and brush with olive oil.
Place the stuffed calamari tubes on the grill and cook for about 3-4 minutes on each side, or until nicely charred and cooked through.
Prepare the Herb Butter:
In a small saucepan, melt the butter over medium heat.
Add garlic, thyme, chili flakes (if using), and a pinch of salt and pepper. Let it simmer for 1-2 minutes.
Serve:
Drizzle the grilled calamari with the herb butter.
Garnish with fresh thyme and a wedge of lemon for an extra burst of flavor.
