Loaded Chicken Nachos
Ingredients:
1 lb cooked shredded chicken
1 bag (10–12 oz) tortilla chips
1½ cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 can (15 oz) black beans, drained and rinsed
1 cup corn, drained
1 small tomato, diced
¼ cup red onion, finely diced
1 jalapeño, thinly sliced
1 tsp chili powder
½ tsp ground cumin
½ tsp garlic powder
½ tsp paprika
¼ tsp salt
¼ tsp black pepper
2 green onions, sliced
¼ cup chopped fresh cilantro
Sour cream, for serving
Guacamole or salsa, for serving
Instructions:
Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a bowl, toss the cooked chicken with chili powder, cumin, garlic powder, paprika, salt, and black pepper.
Spread half of the tortilla chips evenly over the baking sheet.
Layer half of the seasoned chicken, black beans, corn, cheddar, and Monterey Jack over the chips.
Add the remaining chips and repeat with the remaining chicken, beans, corn, and cheese.
Sprinkle the diced tomato, red onion, and jalapeño over the top.
Bake for 8–10 minutes, until the cheese is completely melted and bubbling.
Remove from the oven and immediately top with green onions and fresh cilantro.
Serve hot with sour cream, salsa, and guacamole.
