I’m not sure what is more significant to me: the beauty of tin-lined copper’s appearance, or the unparalleled cooking performance. The latter gives me a sense of wonder at the elemental thermal characteristics that contribute to the cooking precision (especially compared to other cooking vessels), and the prior denotes a feeling of excitement toward rustic cooking of homegrown foods and sustainable living.

Tin-lined copper cookware brightens a home and brings perfectly harmony to the seeming dichotomy between function and beauty.

In part one we showed what the original lining looked like. It probably hadn’t been tinned in 30 years or more! Here we see the process of applying a new tin lining. It always feels wonderful putting new life in these pans. They are almost too beautiful to cook in, but that is the whole point! Use them and don’t be afraid to get them dirty.

Part one of a two part series going over the restoration of this Windsor pan that is in bad shape. It might look terrible but it’s most likely the original lining from decades ago. A little TLC and it will be like new.

There’s a strange idea that a perfectly smooth tin lining must be a better tin lining. It isn’t.

Some of the best tin linings you’ll ever see have waves, wipe marks, and little irregularities left behind from the process of working molten tin across copper by hand.

That’s what handmade and quality looks like.

I’ll take a thick, hand-wiped lining with the signature of the craftsman over a perfectly smooth, paper-thin electroplated surface every time. It can last decades.

Character is a feature, not a flaw.

I couldn’t escape the heat last week, so I had to wait it out. Thank goodness I don’t have neighbors near by… the buffing wheel isn’t the quietest machine. Thank you Steve Sando and the Rancho Gordo staff staff, and especially Steve and Rachel for the many Saturdays you’ve let me come!
