The Hook: Short on time but want a gourmet breakfast? 🕒 This Garlic Mushroom and Spinach Scramble comes together in under 5 minutes and is packed with rich, savory flavor.

Ingredients
Eggs: 3 large eggs, beaten

Mushrooms: ½ cup sliced cremini or button mushrooms

Spinach: A handful of fresh baby spinach

Garlic: 1 clove, minced (or garlic powder)

Olive Oil/Butter: 1 tbsp

Seasoning: Salt and freshly cracked black pepper

Step-by-Step Instructions
Quick Sear: Heat oil or butter in a non-stick pan over medium-high heat. Toss in the mushrooms and minced garlic, sautéing for about 2 minutes until golden.

Wilt the Greens: Drop in the spinach and let it collapse (takes about 30 seconds).

Scramble: Turn the heat down to medium-low, pour in the beaten eggs, and gently fold everything together for 1–2 minutes until the eggs are soft and creamy. Season with plenty of black pepper and serve instantly!

Hot Honey Roasted Carrots with Herbed Feta
Caption: Move over boring side dishes—these Hot Honey Roasted Carrots are the new star of the table! 🔥🥕 Sweet, smoky, charred to perfection, and topped with a creamy, herbed feta crumble. You won’t be able to eat just one!

Prep time: 10 mins | Cook time: 25 mins

Ingredients
1 lb whole carrots, peeled and halved lengthwise

2 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

Salt and black pepper to taste

1/3 cup crumbled feta cheese

2-3 tbsp hot honey

Fresh finely chopped parsley for garnish

Optional: A dollop of whipped feta or hummus on the side for dipping!

Instructions
Prep & Season: Preheat your oven to 400°F (200°C). Toss the halved carrots with olive oil, smoked paprika, garlic powder, salt, and pepper until well coated.

Roast: Arrange the carrots in a single layer on a baking sheet. Roast for 20–25 minutes, flipping halfway through, until they are tender and have beautiful charred edges.

Garnish & Serve: Transfer the hot carrots to a serving platter. Immediately crumble the feta cheese over the top so it softens slightly. Drizzle generously with hot honey and finish with fresh parsley.

Pure comfort food, but make it gourmet! Smoky, blackened shrimp sitting on a bed of rich, garlic-herb mashed potatoes with a savory reduction sauce. 🤤

Prep time: 5 mins | Cook time: 15 mins

Ingredients
6 large shrimp, tail-on

1 tbsp cajun or blackening seasoning

1 tbsp butter

1 cup mashed potatoes (mixed with finely chopped parsley and chives)

Sauce: 2 tbsp beef broth + 1 tbsp balsamic glaze (simmered until thick) or a dark pan gravy

Fresh oregano for garnish

Instructions
Sear Shrimp: Coat shrimp generously in blackening seasoning. Melt butter in a skillet over high heat and sear the shrimp for 2 minutes on each side until cooked through with a nice crust.

Build the Plate: Spoon a thick circle of your reduction sauce onto the plate. Place a neatly molded scoop of herb mashed potatoes right in the center.

Serve: Layer the blackened shrimp on top of the potatoes and garnish with fresh oregano.
