Most people focus on the seasoning when roasting potatoes.

But the side touching the pan can make just as much of a difference.

I tested Japanese sweet potatoes both ways:

🥔 Skin-side up
🥔 Skin-side down

Same potatoes. Same oil. Same seasoning. Same oven.

The version with the cut side against the pan developed a deeper caramelization and brought out even more of the natural sweetness.

It’s a small detail, but sometimes the smallest changes create the biggest improvements in flavor.

I was cooking at the Haas Race Team HQ and got to try something I’d never used before… the SLOTDOG. 🌭🏁

It’s a simple tool that puts a crosshatch pattern into your hot dog… crazy right?!

The cuts create more surface area for sauces, mustard, chili, or whatever toppings you’re into. 🙌🏽

Plus, those edges crisp up on the grill and add a really cool texture that you don’t get with a regular hot dog. 🤯

Save this for your next beach trip or cookout 🔥

I made grilled jalapeño poppers stuffed with pimento cheese on the Bistro Pro using charcoal + hickory briquets, and these disappeared fast.

Smoky, cheesy, crispy bacon, and just enough heat without being over the top.

One important trick:
Only cut the stem off the jalapeños instead of slicing them down the middle. That keeps the filling from leaking out while they cook.

Simple detail, big difference.



Grilled Jalapeño Poppers with Pimento Cheese

Ingredients
10 medium jalapeños
12 oz pimento cheese
About 2 tbsp Smokehouse seasoning
20 slices bacon

Instructions
Preheat grill for indirect cooking using charcoal and hickory briquets.

Cut only the stem end off each jalapeño and remove the seeds from inside.

Mix the pimento cheese with the Dales Smokehouse seasoning.

Stuff each jalapeño with the pimento cheese mixture.

Wrap each jalapeño with bacon.

Place on the grill over indirect heat and cook until the bacon is crispy and the peppers are tender.

Let cool slightly before serving.



This is one of those recipes that reminds you grilling doesn’t always need to be complicated to feel impressive.
