Coconut Dates are literal bites of heaven! The creamy coconut filling comes together with just two ingredients. These are the perfect sweet treat! I need to make more 😮

To make these Coconut Dates I blend 2 cups of shredded coconut until it gets to a fine texture. I add 2 tablespoons of coconut oil to bring it together into a paste. I stuff the dates with the coconut and add almonds then pop them in the freezer to firm up. Doing that will help when dipping them in chocolate. Melt any chocolate you like and dunk half of the coconut date. Sprinkle with flaky sea salt. Place the chocolate coated dates in the refrigerator until the chocolate sets, then enjoy!

Lemon Loaf Made Easy 🍋
This is the easiest thing to bake and it will for sure WOW your fam + friends! The lemon flavor is bright and it’s deliciously moist. The lemon glaze adds a nice layer of subtle sweetness. A must bake IMO! 🤗

Start by preheating your oven to 350 degrees and lining a loaf pan with parchment paper that has about an inch hanging out of the pan.
In a large bowl massage together 1 cup sugar and the zest of one whole lemon. Next add 1/4 cup melted butter and 1/4 cup vegetable oil and mix. Then add 2 tsp vanilla and 1 tsp lemon extract, 3 eggs, 1/3 cup milk and 1/3 cup Greek yogurt. Whisk until everything is well combined. Ditch the whisk and switch to a spatula to fold in 1 3/4 cups flour, 1 tsp baking powder and 1/2 tsp salt. Pour the natter into the loaf pan and bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
To make the glaze whisk together 2 cups of sifted powder sugar, milk and the juice of half a lemon. Once the loaf has full cooled, pour on the glaze. Let the glaze set for 15 minutes before slicing!
