2 tablespoons (30ml) olive oil
1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch (2.5cm) pieces
1 teaspoon (5ml) chili powder
1 teaspoon (5ml) ground cumin
1/2 teaspoon (2.5ml) smoked paprika
1/2 teaspoon (2.5ml) garlic powder
1/2 teaspoon (2.5ml) onion powder
1 teaspoon (5ml) salt
1/2 teaspoon (2.5ml) black pepper
1 medium onion, diced
2 cloves garlic, minced
1 can (15 ounces / 425g) black beans, drained and rinsed
1 can (15 ounces / 425g) corn kernels, drained
1 can (10 ounces / 285g) diced tomatoes with green chilies, undrained
1 cup (240ml) salsa
1 cup (240ml) sour cream
2 cups (200g) shredded Mexican cheese blend, divided
2 cups (180g) cooked white or brown rice
1/4 cup (60ml) chopped fresh cilantro
Optional toppings: sliced jalapeños, diced avocado, chopped green onions, crushed tortilla chips

Directions:

1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch (23x33cm) baking dish.
2. In a large bowl, season the chicken pieces with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
3. Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 6-8 minutes until browned and cooked through. Add the diced onion during the last 3 minutes of cooking. Stir in the minced garlic and cook for 30 seconds until fragrant.

2 tablespoons (30ml) vegetable oil
1 teaspoon (5ml) garlic powder
1 teaspoon (5ml) onion powder
1 teaspoon (5ml) paprika
1/2 teaspoon (2.5ml) dried thyme
1 teaspoon (5ml) salt
1/2 teaspoon (2.5ml) black pepper
2 tablespoons (30g) butter
2 large onions, thinly sliced
3 cloves garlic, minced
2 tablespoons (16g) all-purpose flour
2 cups (480ml) beef broth
1 tablespoon (15ml) Worcestershire sauce
1 teaspoon (5ml) Dijon mustard
1/2 teaspoon (2.5ml) dried rosemary
1 tablespoon (15ml) chopped fresh parsley
Optional garnish: chopped parsley or fresh thyme

Directions:

1. Pat the pork chops dry with paper towels. Season both sides with garlic powder, onion powder, paprika, thyme, salt, and black pepper.
2. Heat the vegetable oil in a large skillet over medium-high heat. Sear the pork chops for 4-5 minutes per side until deeply browned. Remove them from the skillet and set aside.

2 cups (300g) cooked ham, diced
4 cups (600g) frozen hash brown potatoes, thawed
1 can (10.5 ounces / 300g) cream of cheddar or cream of chicken soup
1/2 cup (120ml) sour cream
1/2 cup (120ml) whole milk
1 teaspoon (5ml) Dijon mustard
1 teaspoon (5ml) onion powder
1/2 teaspoon (2.5ml) garlic powder
1/2 teaspoon (2.5ml) black pepper
1/4 teaspoon (1.25ml) smoked paprika
2 cups (225g) shredded sharp cheddar cheese, divided
1 can (16.3 ounces / 462g) refrigerated biscuit dough (8 biscuits)
2 tablespoons (30ml) melted butter
1 teaspoon (5ml) dried parsley

Directions:

2 celery stalks, finely diced
4 cloves garlic, minced
2 tablespoons (30ml) tomato paste
1 can (28 ounces / 800g) crushed tomatoes
1/2 cup (120ml) beef broth
1/2 cup (120ml) whole milk
1 tablespoon (15ml) Worcestershire sauce
1 teaspoon (5ml) Italian seasoning
1/2 teaspoon (2.5ml) dried oregano
1/2 teaspoon (2.5ml) dried basil
1 teaspoon (5g) salt
1/2 teaspoon (2.5g) black pepper
1/4 teaspoon (1.25ml) crushed red pepper flakes (optional)
2 tablespoons (30ml) chopped fresh parsley
1/2 cup (50g) freshly grated Parmesan cheese

1 teaspoon (5g) salt
1/2 teaspoon (2.5g) black pepper

4 cups (360g) broccoli florets
2 tablespoons (30ml) vegetable oil
4 cloves garlic, minced
1 tablespoon (15ml) fresh ginger, grated
1/2 teaspoon (2.5ml) black pepper

For the marinade:
2 tablespoons (30ml) soy sauce
1 tablespoon (15ml) oyster sauce
1 tablespoon (15ml) cornstarch
1 teaspoon (5ml) sesame oil

For the stir fry sauce:
1/2 cup (120ml) low-sodium beef broth
1/4 cup (60ml) soy sauce
2 tablespoons (30ml) oyster sauce
1 tablespoon (15ml) brown sugar
1 tablespoon (15ml) hoisin sauce
1 teaspoon (5ml) sesame oil
1 tablespoon (15ml) cornstarch
2 tablespoons (30ml) water

Optional garnish:
2 green onions, sliced
1 teaspoon (5ml) sesame seeds
Cooked white rice or steamed jasmine rice for serving

Directions:

1. In a medium bowl, combine the soy sauce, oyster sauce, cornstarch, and sesame oil for the marinade. Add the sliced beef and toss until evenly coated. Let it marinate for 20-30 minutes.

4. Bake the meatloaf for 30-35 minutes, carefully draining any excess grease if necessary.
5. Meanwhile, place the cubed potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 15-18 minutes, or until fork tender.
6. Drain the potatoes well and return them to the pot. Add the butter, warmed milk, and sour cream. Mash until smooth and creamy. Season with additional salt and pepper to taste if needed.
7. Remove the partially baked meatloaf from the oven and spread the mashed potatoes evenly over the top using a spatula.

10. Remove from the oven and let the bake rest for 10 minutes before serving.
