Greek-yogurt apple pie skillet oats

Ingredients:
- 1 cup rolled oats
- 2 cups unsweetened almond milk (or any milk of your choice)
- 1 medium apple, diced
- 1/2 cup Greek yogurt
- 1/4 cup brown sugar (or maple syrup)
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 tablespoon vanilla extract
- 1/4 cup chopped walnuts (optional)
- 1 tablespoon butter or coconut oil (for greasing the skillet)

Directions:
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, melt the butter or coconut oil over medium heat. Make sure to coat the bottom of the skillet evenly.
3. Add the diced apple to the skillet and sauté for about 3-4 minutes until slightly softened.
4. In a mixing bowl, combine the rolled oats, almond milk, Greek yogurt, brown sugar, cinnamon, nutmeg, salt, and vanilla extract. Stir until well combined.
5. Pour the oat mixture over the sautéed apples in the skillet. Gently stir to combine.
6. If using, sprinkle the chopped walnuts on top of the mixture.
7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the oats are set and the top is golden brown.
8. Remove from the oven and let it cool for a few minutes before serving.

Egg-white Southwest Egg Flight

Ingredients:
- 6 large egg whites
- 1/2 cup diced bell peppers (red, green, or yellow)
- 1/4 cup diced red onion
- 1/2 cup fresh spinach, chopped
- 1/4 cup black beans, rinsed and drained
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/4 cup shredded low-fat cheese (optional)
- Fresh cilantro for garnish (optional)
- Avocado slices for serving (optional)

Directions:
1. In a medium bowl, whisk the egg whites until slightly frothy. Set aside.
2. Heat olive oil in a non-stick skillet over medium heat. Add the diced bell peppers and red onion, sautéing for about 3-4 minutes until softened.
3. Stir in the chopped spinach and black beans, cooking for an additional 2 minutes until the spinach wilts.
4. Sprinkle in the ground cumin, chili powder, salt, and pepper, mixing well to combine.
5. Pour the whisked egg whites over the vegetable mixture in the skillet. Cook for 3-4 minutes, gently stirring occasionally, until the egg whites are fully cooked and set.
6. If desired, sprinkle shredded cheese on top and cover the skillet for 1 minute to melt the cheese.
7. Remove from heat and garnish with fresh cilantro. Serve with avocado slices on the side.

Ingredients:
- 6 large eggs
- 1 cup cottage cheese
- 1 cup fresh spinach, chopped
- 1/2 cup bell pepper, diced (any color)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh herbs for garnish (optional)

Directions:
1. Preheat your oven to 375°F (190°C).
2. In a large mixing bowl, whisk together the eggs, cottage cheese, garlic powder, salt, and black pepper until well combined.
3. Heat the olive oil in a large, oven-safe skillet over medium heat. Add the red onion and bell pepper, sautéing for about 3-4 minutes until softened.
4. Stir in the chopped spinach and cherry tomatoes, cooking for an additional 2 minutes until the spinach wilts.
5. Pour the egg and cottage cheese mixture over the sautéed vegetables in the skillet. Gently stir to combine.
6. Cook on the stovetop for 2-3 minutes until the edges begin to set.

- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish
- Avocado slices for serving (optional)

Directions:
1. In a medium bowl, whisk together the eggs, Greek yogurt, cumin, chili powder, salt, and pepper until well combined.
2. Heat olive oil in a non-stick skillet over medium heat. Add the diced bell peppers and red onion, sautéing for about 3-4 minutes until they are softened.
3. Stir in the corn and cook for an additional 2 minutes.
4. Pour the egg mixture into the skillet with the sautéed vegetables. Allow it to cook undisturbed for about 2 minutes until the edges start to set.
5. Gently stir the eggs with a spatula, allowing the uncooked eggs to flow to the edges. Continue cooking until the eggs are fully set but still creamy, about 3-4 more minutes.
6. Remove from heat and garnish with fresh cilantro. Serve with avocado slices if desired.
