Charred Beef Kofta Wraps with Homemade Tzatziki

Servings: 4 wraps
Ingredients
For the Seasoned Meat (Kofte/Kebabs):
1 lb (450g) ground beef (or ground lamb, or a mix of both)
1 small onion, grated and squeezed of excess liquid
2 cloves garlic, minced
¼ cup fresh parsley, finely chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika
Salt and freshly cracked black pepper (to taste)
1 tbsp olive oil (for cooking)
For the Homemade Tzatziki Sauce:
1 cup Greek yogurt (full-fat is best)
½ English cucumber, grated and squeezed dry in a paper towel
1 clove garlic, finely grated
1 tbsp fresh dill or mint, chopped
1 tbsp lemon juice or red wine vinegar
1 tbsp extra virgin olive oil
Salt (to taste)
For the Wraps & Assembly:
4 soft flatbreads (pita, naan, or Greek-style flatbreads)
1 cup shredded lettuce
1 large tomato, sliced
½ English cucumber, sliced
½ red onion, thinly sliced
Red pepper flakes and fresh chopped herbs (for garnish)
Instructions
1. Make the Tzatziki Sauce
In a bowl, combine the Greek yogurt, grated (and squeezed) cucumber, minced garlic, herbs, lemon juice, and olive oil.
Stir well, season with salt to taste, and pop it in the fridge to let the flavors meld while you cook.
2. Prepare and Cook the Meat
In a medium bowl, combine the ground meat, grated onion, garlic, parsley, cumin, coriander, paprika, salt, and pepper. Mix gently with your hands just until combined (don't overwork the meat or it will become tough).
Shape the mixture into oblong, slightly flattened patties (about the length of your flatbread).
Heat olive oil in a cast-iron skillet or grill pan over medium-high heat.
Cook the patties for 4 to 5 minutes per side until they develop a gorgeous, deeply caramelized char and are cooked through. Remove and let them rest for 2 minutes.
3. Warm and Assemble
Warm the flatbread: Toss your flatbreads onto the same hot skillet for about 30 seconds per side until warm, pliable, and slightly toasted.
Layer it up: Down the center of each warm flatbread, layer a handful of shredded lettuce, tomato slices, cucumber slices, and red onion.
Add the star: Place a hot, juicy beef patty right on top of the fresh veggies.
Finish with sauce: Drizzle a incredibly generous spoonful of the cool tzatziki sauce over the meat. Garnish with a pinch of red pepper flakes and extra fresh herbs.
Fold, wrap, and dive in!
