High-Protein Greek Yogurt Cheesecake Cups 🍰💪
Ingredients:
Cheesecake Base:

1 cup Greek yogurt (vanilla or plain)

4 oz light cream cheese, softened

2–3 tbsp honey or maple syrup

1 tsp vanilla extract

1 scoop vanilla protein powder

Crust (Optional):

1/2 cup crushed graham crackers

2 tbsp melted butter

Toppings:

Fresh berries

Honey drizzle

Granola or crushed cookies (optional)

Directions:

Mix graham crumbs + melted butter; press into small cups. (Optional)

In a bowl, whisk Greek yogurt, cream cheese, honey, vanilla, and protein powder until smooth.

Spoon cheesecake mixture into cups.

Chill 1–2 hours to set.

Add berries, honey, or granola before serving.

🧈 Maple Brown-Butter Mini Tartlets with Caramelized Pears 🍐✨

Ingredients:

Crust:

1 cup flour

1/3 cup cold butter

2 tbsp sugar

2–3 tbsp cold water

Brown-Butter Maple Filling:

1/2 cup butter (browned)

1/3 cup pure maple syrup

1/4 cup brown sugar

1 egg

1 tsp vanilla

Pinch of salt

Caramelized Pears:

2 ripe pears, diced

1 tbsp butter

1 tbsp brown sugar

Pinch of cinnamon

Directions:

Make the Crust:
Mix flour + sugar, cut in cold butter, add water to form dough.
Press into mini tartlet pans. Chill 15 minutes.

Brown the Butter:
Cook butter until golden + nutty; cool slightly.
Whisk with maple syrup, brown sugar, egg, vanilla, and salt.

Caramelize the Pears:
Cook pears in butter + brown sugar + cinnamon for 5 minutes.

Assemble:
Spoon caramelized pears into tart shells.
Pour brown-butter maple filling over the top.

Bake:
Bake at 350°F (175°C) for 15–18 minutes, until set and lightly golden.

Ingredients:

1/2 cup natural peanut butter

1/4 cup Greek yogurt

1 cup rolled oats

2–3 tbsp honey or maple syrup

1 scoop vanilla protein powder

1 tsp vanilla

Pinch of salt

Optional: mini chocolate chips, chia seeds, flaxseed

Directions:

In a bowl, mix peanut butter, Greek yogurt, honey, and vanilla.

Add oats, protein powder, and salt.

Stir in chocolate chips or seeds if using.

Chill dough for 20 minutes.

Roll into small balls.

Store in the fridge for up to 5 days.

Directions:

Ingredients:

Pumpkin Cream:

1 cup heavy whipping cream

8 oz mascarpone

1/2 cup pumpkin purée

1/3 cup powdered sugar

1 tsp vanilla

1–2 tsp chai spice

Ladyfinger Layer:

1 package ladyfingers

1 cup strong chai tea (cooled)

1 tbsp sugar (optional)

Toppings:

Cocoa or cinnamon

Whipped cream

Crushed cookies (optional)

Directions:

Whip heavy cream to soft peaks.

In another bowl, mix mascarpone, pumpkin, powdered sugar, vanilla, and chai spice.

Fold whipped cream into pumpkin mixture.

Dip ladyfingers quickly in cooled chai tea.

Layer cups:

Chai-dipped ladyfingers

Pumpkin chai cream

🍁🧈 Maple Brown Butter Pecan Pie Bars 🥧🍁

Ingredients:

Crust:

1 cup unsalted butter (browned)

1/2 cup sugar

2 cups flour

1/4 tsp salt

Pecan Filling:

3 large eggs

1 cup brown sugar

1/2 cup pure maple syrup

1/4 cup melted butter

1 tsp vanilla

1/4 tsp salt

2 cups chopped pecans

Directions:

Brown the Butter: Melt butter until golden + nutty; cool slightly.

Make the Crust: Mix browned butter, sugar, flour, and salt.

Press into a 9×13 pan and bake at 350°F (175°C) for 15 minutes.

Make the Filling: Whisk eggs, brown sugar, maple syrup, melted butter, vanilla, and salt.

Stir in pecans and pour over warm crust.

Bake 25–30 minutes until set.

Cool completely, slice into bars, and enjoy!
