Cream cheese, bacon bites, green onion, and ranch seasoning get stirred together, then the whole thing is rolled in cheddar and tied up with tw**e to make those pumpkin ridges. A little bell pepper stem on top and it looks like it belongs on the porch next to the real ones.

It’s the first thing I set out when the weather finally cools off and the porch gets its pumpkins. Crackers on the side, and the whole thing is gone before the leaves hit the yard.

I crushed a bag of pretzels with a rolling pin for this one, and it turned out to be the best stress relief I’ve had all week.

Pork chops get seasoned, brushed with honey Dijon, then pressed into a pile of crushed pretzels and Parmesan. They bake until the crust is deep golden, and while they’re in the oven I whisk sour cream, more Dijon, honey, and a squeeze of lemon into a drizzle. The pretzels already bring the salt, so the crust stays crunchy even with sauce on top.

Press that coating on firmly with your palm. It’s the difference between a crust that sticks and one that slides right off.

I keep a can of pumpkin and a box of spice cake mix in my pantry from September on, because these muffins are the fastest fall baking I know.

The whole recipe is stirring the two together until smooth. The batter comes out thick, so I spoon it into a lined muffin tin, and twenty minutes later the kitchen smells like October. I like them plain while they’re still warm, but a sprinkle of cinnamon sugar or cream cheese icing is never a bad idea.

They’re moist and fluffy enough that nobody believes there are only two ingredients.

Pears and chicken thighs sharing a pan sounded strange to me until the first time I pulled it out of the oven, and now it’s on my fall dinner list every year.

Thighs get seasoned with Creole Trinity & Herb and Magic Poultry, then go over a few pats of butter with peeled pear halves tucked in between. Honey gets drizzled over everything, fresh thyme and rosemary go on top, and the oven handles the rest. When it comes out, a good drizzle of hot honey goes right over the top.

I always end up dragging a dinner roll through those buttery pan juices before the dish makes it to the sink.

Once those onions hit the Dutch oven, my whole house smells like French onion soup, and by the time the roast comes out, somebody is always standing at my elbow with a fork.

The chuck roast gets a good coat of Blues Hog Bold & Beefy seasoning and a hard sear first. Then three big onions cook down in butter until they’re sweet and deep golden, and white w**e, broth, a little balsamic, and Worcestershire turn them into the gravy. Back goes the roast with a few herbs, and the oven does the rest for hours until it shreds with a spoon.

A little Gruyère melted on top is optional, but I never skip it.
