Triple Decker Key Lime Pie
This layered Key Lime Pie brings a triple dose of tangy lime flavor with creamy textures that are irresistibly refreshing!
Ingredients:
For the Crust:
1 ½ cups graham cracker crumbs
⅓ cup granulated sugar
½ cup unsalted butter, melted
For the Filling:
1 (14 oz) can sweetened condensed milk
¾ cup key lime juice (freshly squeezed if possible)
Zest of 2 key limes
3 large egg yolks
For the Topping:
1 cup heavy whipping cream
2 tbsp powdered sugar
Lime zest or thin lime slices (for garnish)
Instructions:
Prepare the Crust: Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes, then let cool.
Make the Filling: In a medium bowl, whisk together the condensed milk, key lime juice, lime zest, and egg yolks until smooth.
Assemble the Layers:
First Layer: Pour a third of the filling into the cooled crust and bake for 10 minutes. Let cool for 5-10 minutes.
Second Layer: Add the next third of the filling, spreading evenly, and bake for another 10 minutes. Let cool.
Third Layer: Pour the final third of the filling, smoothing it out, and bake for a final 10 minutes until the filling is set. Let cool completely, then chill in the refrigerator for at least 2 hours.
Whipped Topping: Whip the heavy cream with powdered sugar until soft peaks form. Spread or pipe the whipped cream on top of the chilled pie.
Garnish: Top with extra lime zest or lime slices for a fresh look.
