To make sure I am able to get the protein in question, place your order 3 days in advance. I’d like a week of possible but 3 days should be fine.
Saturday orders need ordered by Wednesday
Sunday orders need to be ordered by Thursday

And to make things easy for brisket and pork I have the person estimate what size they need. I take the price per lb and half it since with pork and brisket you lose about 50% so let’s say a 13 lb brisket I charge 6.5x $22
