Crispy Garlic Parmesan Chicken Smash Tacos
* Prep time: 15 minutes
* Cook time: 25–30 minutes
* Yield: 8 tacos, serving 4
Ingredients
For the Tacos
* 1 lb. ground chicken
* ½ cup grated Parmesan cheese
* 1 teaspoon garlic powder
* 1 teaspoon Italian seasoning
* ½ teaspoon onion powder
* ½ teaspoon salt
* ¼ teaspoon black pepper
* 8 small flour tortillas
* Oil, for cooking
* Shredded lettuce, for topping
* Extra grated Parmesan, for topping
For the Creamy Garlic Sauce
* ½ cup mayonnaise
* 2 tablespoons sour cream
* 1 garlic clove, pressed or finely minced
* 1 tablespoon lemon juice
* 2 tablespoons grated Parmesan cheese
* Salt and black pepper, to taste
Directions
1. Prepare the Chicken Mixture
* Add the ground chicken, Parmesan, garlic powder, Italian seasoning, onion powder, salt, and black pepper to a medium bowl.
* Mix everything together until well combined.
* Keep the chicken refrigerated until you’re ready to cook.
* After handling the raw chicken, wash your hands, utensils, and work surfaces thoroughly with hot, soapy water.
2. Spread the Chicken on the Tortillas
* Divide the chicken mixture into 8 equal portions.
* Spread one portion over each tortilla in a thin, even layer, almost all the way to the edges.
* A Small Spreader makes this step quick and easy.
* Place the prepared tortillas on a clean plate or tray, away from any ready-to-eat ingredients.
3. Heat the Skillet
* Lightly coat a 12-inch Cast Iron Skillet with oil.
* Heat the skillet over medium-high heat.
* Make sure it’s hot before you start cooking.
4. Cook the Chicken Side
* Place a tortilla in the skillet with the chicken side facing down.
* Depending on the size of your skillet, cook 2 tacos at a time.
* Press down gently with a spatula.
* Cook for 3–4 minutes, until the chicken is golden brown and crispy.
* Try not to overcrowd the skillet so the tacos cook evenly.
5. Cook the Tortilla Side
* Carefully flip each taco.
* Cook for another 1–2 minutes, until the tortilla is crisp.
* Check the thickest part of the chicken with an instant-read thermometer.
* The chicken should reach 165°F before serving.
* If it hasn’t reached that temperature yet, continue cooking and check again.
* Don’t rely on color alone to tell whether ground chicken is fully cooked.
6. Cook the Remaining Tacos Safely
* Transfer each cooked taco to a clean plate.
* Repeat with the remaining tortillas.
* Add a little more oil to the skillet as needed.
* Keep the cooked tacos separate from any plates or utensils that touched the raw chicken.
7. Make the Sauce
* While the tacos are cooking, add the mayonnaise, sour cream, garlic, lemon juice, Parmesan, salt, and black pepper to a small bowl.
* Stir until smooth.
* Use clean utensils, and keep the sauce refrigerated until you’re ready to serve.
8. Assemble and Serve
* Top each taco with shredded lettuce, extra Parmesan, and a generous drizzle of creamy garlic sauce.
* Fold and serve right away.
Storage and Reheating
* Refrigerate leftovers within 2 hours.
* If the temperature is above 90°F, refrigerate them within 1 hour.
* Enjoy leftovers within 3–4 days.
* Reheat leftovers to 165°F before eating.
Crispy Cooking Tip
For the loudest crunch and deepest golden crust, spread the chicken almost to the tortilla’s edges in a thin, even layer. When it hits a properly heated skillet, that broad surface contact creates a sizzling sear instead of a soft, steamed center. Give it time to brown undisturbed, then flip once the edges look crisp and deeply golden. 🔥
