Moist Lime Bundt Cake with Zesty Glaze
Ingredients
For the Lime Bundt Cake
* 3 cups All-Purpose Flour
* 1 teaspoon Baking Powder
* 1/2 teaspoon Baking Soda
* 1/2 teaspoon Salt
* 1 cup (2 sticks) Unsalted Butter, softened
* 2 cups Granulated Sugar
* 4 large Eggs
* 1 cup Buttermilk (or 1 cup milk mixed with 1 tablespoon lime juice)
* 1/4 cup Fresh Lime Juice
* 2 tablespoons Lime Zest
For the Zesty Lime Glaze
* 3 cups Confectioners' Sugar (Powdered Sugar), sifted
* 1/4 cup Fresh Lime Juice
* 1 tablespoon Lime Zest (finely grated, for color and flavor)
* 1-2 drops Green Food Coloring (optional, for vibrant color)
For Garnish
* 2-3 Limes, thinly sliced
Instructions
1. Prepare the Cake Batter
* Preheat & Prep: Preheat oven to 325°F (160^\circ\text{C}). Thoroughly grease and flour a 10-12 cup Bundt pan.
* Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
* Cream Butter and Sugar: In a separate large bowl, beat the softened butter and granulated sugar until light and fluffy.
* Add Eggs: Add the eggs one at a time, beating well after each addition.
* Mix Wet & Dry: In a small bowl, combine the buttermilk, lime juice, and lime zest. Alternately add the dry ingredient mixture and the buttermilk mixture to the butter/sugar mixture, beginning and ending with the dry ingredients. Mix until just combined.
2. Bake the Cake
* Pour the batter into the prepared Bundt pan, spreading it evenly.
* Bake for 50-60 minutes, or until a long wooden skewer inserted into the center comes out clean.
* Cool the cake in the pan for 15 minutes, then invert it onto a wire rack to cool completely.
3. Make the Zesty Glaze
* In a medium bowl, combine the sifted confectioners' sugar and lime juice. Whisk until smooth and thick.
* Stir in the lime zest and 1-2 drops of green food coloring (if using). The glaze should be thick enough to slowly run down the sides.
4. Assemble and Decorate
* Once the cake is completely cool, place it on a serving plate.
* Pour the thick glaze evenly over the top of the cake, allowing it to drip down the sides.
* Sprinkle extra lime zest over the top while the glaze is still wet.
* Garnish with the thin lime slices placed in the center.
