All I can say is WOW! Every once in a while you just feel like something is going to come out awesome. That was the feeling I got yesterday buying all the fresh ingredients for this cook. It was reinforced by Miss Laura telling me that everything was making the house smell great.

The Cuban style pork loin was moist, juicy and tasted like a smoked moho cuban sandwich. I even made a mini sandwich just because it seemed like the thing to do. The Mediterranean pork loin had very vibrant flavors and tasted so fresh. Only criticism of the mediterranean loin was that I should have done it on the smoker. The smoke flavor would have added a nice touch. Cooking in the oven at a little higher temp caused the ends to be a little dry. I was a bit surprised because of the marinade used and both loins finishing fairly close to each other. To be fair it though, the mediterranean loin was a touch thinner than the cuban loin.

I have to mention the black beans and yellow rice. They were fantastic. The beans were tender but not mushy or pasty like you sometimes get at a restaurant. I could have made a meal just out of those, however the pork was meant to be the star of this cook. Thanks for following along. If you want more details of this cook, I’d be happy to provide.

Day 2 Smoked Pork Roulade: Prepped Mojo marinaded pork loin with Lanes Cuban oseasoning, cuban sandwich meats as well as some tomatoes and cilantro. Prepped Mediterranean marinaded pork loin with Blackbeard Triton seasoning, baby spinach, roma tomatoes, green onions, yellow onions, minced garlic, and feta cheese. Cuban loin is on the smoker while the Mediterranean is being done inside in the oven.
