Heading to my sister-in-law’s for an early dinner today and this is what I “made” for dessert!

What you need:
— ladyfinger cookies
— about 2 cups of strong brewed coffee, cooled; mixed with a good shot (or two) of Kahlua coffee liqueur
— coffee ice cream (softened slightly)
— vanilla ice cream (softened slightly)
— cocoa powder for dusting

How to:
— Line a loaf pan with plastic wrap, making sure it hangs off the sides
— dip the ladyfingers in the coffee and Kahlua mixture (do not soak them or they will fall apart)
— start layering the cookies on the bottom, then the coffee ice cream, more cookies, then the vanilla ice cream, then a final layer of cookies
— fold in the plastic wrap so the cookies are covered, pressing down gently
— freeze a few hours or overnight. Gently remove from the loaf pan and place on a platter. Dust with cocoa powder.

I made this salad for today (Thanksgiving), but it’s actually perfect for any winter holiday or gathering! Homemade dressing not pictured, and crumbled Gorgonzola (not the Gorgonzola that’s already crumbled in a container) served on the side.

Baby lettuces
Radicchio
Chopped pink lady apple
Dried cranberries
Toasted hazelnuts
