🧀🌯 Cheesy Chicken Enchiladas with Creamy Sauce
🧾 Ingredients:
For the Filling:
2 cups cooked, shredded chicken breast
1 cup shredded Monterey Jack or Mexican cheese blend
½ cup sour cream
1 small can diced green chiles (optional)
½ tsp garlic powder
Salt & pepper to taste
For the Creamy Sauce:
2 tbsp butter
2 tbsp flour
1½ cups chicken broth
½ cup sour cream
1 cup shredded cheddar cheese
¼ tsp cumin (optional)
Additional:
8 flour tortillas
1–1½ cups shredded cheese for topping
Chopped cilantro or parsley for garnish
Extra sour cream for serving
👩🍳 Instructions:
1. Make the Filling:
In a bowl, mix shredded chicken, cheese, sour cream, green chiles, garlic powder, salt, and pepper. Set aside.
2. Prepare the Creamy Sauce:
Melt butter in a saucepan over medium heat.
Stir in flour and whisk for 1 minute to make a roux.
Slowly add chicken broth, whisking constantly to avoid lumps.
Once thickened, remove from heat and stir in sour cream, shredded cheese, and cumin. Mix until smooth.
3. Assemble the Enchiladas:
Preheat oven to 375°F (190°C).
Spread a thin layer of sauce on the bottom of a greased 9x13 baking dish.
Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
Pour the rest of the sauce over the enchiladas.
Sprinkle remaining cheese on top.
4. Bake:
Cover with foil and bake for 20 minutes, then uncover and bake an additional 10 minutes until bubbly and golden.
5. Garnish & Serve:
Top with fresh herbs and a dollop of sour cream. Serve hot with rice, beans, or a fresh salad!
