Butter Pecan Cookies

Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup pecans, chopped
- 1/2 teaspoon cinnamon (optional)

🍓 Strawberry Tiramisu
🧾 Ingredients:
1 cup strong brewed coffee or espresso, cooled

2 tbsp coffee liqueur (optional)

1 package ladyfinger biscuits (savoiardi)

1 cup heavy cream

8 oz mascarpone cheese, softened

¼ cup granulated sugar

1 tsp vanilla extract

1–2 tbsp cocoa powder, for dusting

Fresh strawberries, halved (for garnish)

👩‍🍳 Instructions:
1. Make the Cream Filling:
In a mixing bowl, beat heavy cream until stiff peaks form. In another bowl, mix mascarpone, sugar, and vanilla until smooth. Gently fold whipped cream into mascarpone mixture.

2. Dip the Ladyfingers:
Combine cooled coffee and coffee liqueur. Quickly dip each ladyfinger (don’t soak) and layer them in a serving dish.

3. Layer the Dessert:
Spread half the mascarpone cream over the ladyfingers. Add another layer of dipped ladyfingers. Finish with the remaining cream.

4. Chill:
Refrigerate for at least 4 hours (overnight is best) to set.

5. Garnish:
Dust generously with cocoa powder and top with fresh strawberries before serving.

🧀🌯 Cheesy Chicken Enchiladas with Creamy Sauce
🧾 Ingredients:
For the Filling:
2 cups cooked, shredded chicken breast

1 cup shredded Monterey Jack or Mexican cheese blend

½ cup sour cream

1 small can diced green chiles (optional)

½ tsp garlic powder

Salt & pepper to taste

For the Creamy Sauce:
2 tbsp butter

2 tbsp flour

1½ cups chicken broth

½ cup sour cream

1 cup shredded cheddar cheese

¼ tsp cumin (optional)

Additional:
8 flour tortillas

1–1½ cups shredded cheese for topping

Chopped cilantro or parsley for garnish

Extra sour cream for serving

👩‍🍳 Instructions:
1. Make the Filling:
In a bowl, mix shredded chicken, cheese, sour cream, green chiles, garlic powder, salt, and pepper. Set aside.

2. Prepare the Creamy Sauce:
Melt butter in a saucepan over medium heat.

Stir in flour and whisk for 1 minute to make a roux.

Slowly add chicken broth, whisking constantly to avoid lumps.

Once thickened, remove from heat and stir in sour cream, shredded cheese, and cumin. Mix until smooth.

3. Assemble the Enchiladas:
Preheat oven to 375°F (190°C).

Spread a thin layer of sauce on the bottom of a greased 9x13 baking dish.

Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.

Pour the rest of the sauce over the enchiladas.

Sprinkle remaining cheese on top.

4. Bake:
Cover with foil and bake for 20 minutes, then uncover and bake an additional 10 minutes until bubbly and golden.

Homemade Coffee Ice Cream – A Dreamy Treat!

Ingredients:

• 2 cups heavy cream

• 1 cup whole milk

• 3/4 cup granulated sugar

• 2 tablespoons instant coffee or espresso powder

• 1 teaspoon vanilla extract

• 4 large egg yolks

• 1/4 teaspoon salt

Instructions:

1. Heat the Base:

• In a saucepan over medium heat, whisk together heavy cream, milk, sugar, and instant coffee until sugar dissolves.

• Heat until steaming but not boiling.

2. Temper the Egg Yolks:

• In a bowl, whisk egg yolks. Slowly pour in 1/2 cup of the hot cream mixture, whisking constantly.

• Gradually add the yolk mixture back into the saucepan, stirring continuously.

3. Thicken the Custard:

• Cook over low heat, stirring until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

• Remove from heat and stir in vanilla extract and salt.

4. Chill the Mixture:

• Pour through a fine-mesh sieve into a bowl.

• Cover and refrigerate for at least 4 hours or overnight.

Garlic Shrimp Crostini with Avocado & Crispy Onions

Ingredients:

For the Crostini:
- 1 baguette, sliced into ½-inch thick pieces
- 2 tbsp olive oil
- 1 garlic clove
- Salt to taste

For the Garlic Shrimp:
- 12-16 large shrimp, peeled & deveined
- 3 tbsp butter
- 4 garlic cloves, minced
- ½ tsp red pepper flakes (optional)
- 1 tbsp lemon juice
- Salt & black pepper to taste
- 1 tbsp chopped parsley

For the Avocado
- 1 large ripe avocado slice
- 1 tbsp lime juice
- Salt & pepper to taste

Toppings:
- ¼ cup crispy fried onions
- ½ cup fresh microgreens
- Edible flowers
- Herb oil

Herb Oil (Optional Drizzle):
- ¼ cup olive oil
- 2 tbsp fresh herbs (parsley, chives, basil)
- 1 tsp lemon zest
- Pinch of salt

Instructions:

1. Prepare the Crostini:
- Preheat oven to 375°F (190°C).
- Brush baguette slices with olive oil, place on a baking sheet, and bake for 8-10 mins until golden and crisp.
- While still warm, rub each slice with a cut garlic clove for extra flavor.

2. Make the Garlic Shrimp:
- In a skillet, melt butter over medium heat. Add minced garlic and red pepper flakes, sauté for 30 sec until fragrant.
- Add shrimp, season with salt & pepper, and cook 2-3 mins per side until pink and opaque.
- Finish with lemon juice and parsley. Remove from heat.

3. Slice Avocado:
- Slice avocado with lime juice,
salt & pepper.

4. Herb Oil (Optional):
- Blend olive oil, fresh herbs, lemon zest, and salt until smooth. Strain if desired.

5. Assemble:
1. A layer of slice avocado on each crostini.
2. Top with 1-2 garlic shrimp.
3. Sprinkle crispy onions over the shrimp.
4. Arrange microgreens and edible flowers around the plate.
5. Drizzle with herb oil for a gourmet finish.

Ingredients:

2 large flavored tortillas (e.g., tomato basil or chipotle)

2 cups cooked crispy chicken strips (store-bought or homemade)

1 cup shredded lettuce

1/2 cup shredded cheddar cheese

1/4 cup diced red onions

1/4 cup diced tomatoes

1/2 cup guacamole

1/2 cup ranch dressing or a mix of ranch and sour cream

Optional: shredded carrots, purple cabbage, pickles

For Homemade Crispy Chicken (if not using store-bought):

2 chicken breasts, cut into strips

1 cup buttermilk
