Weight Watchers Baked Rigatoni with Meat Sauce & Ricotta

Hearty • Family-style • 6–8 Points per serving

Serves 6

Ingredients

8 oz dry rigatoni or ziti (whole wheat if you like)

1 lb lean ground turkey (93–99%)

1 small onion, diced

3 cloves garlic, minced

3 cups crushed tomatoes (no sugar added)

1 cup tomato sauce

1 tsp Italian seasoning

½ tsp garlic powder

½ tsp onion powder

Salt & pepper, to taste

Red pepper flakes (optional)

Cheese layer

¾ cup part-skim ricotta

½ cup fat-free ricotta (or all part-skim)

½ cup reduced-fat mozzarella

Dried basil or oregano for topping

Instructions

Cook pasta

Boil rigatoni until just al dente. Drain.

Make meat sauce

Brown turkey with onion and garlic.

Add crushed tomatoes, tomato sauce, seasoning, salt & pepper.

Simmer 10–15 minutes until thick.

Assemble

Mix pasta with meat sauce.

Spread into a baking dish.

Spoon ricotta evenly over the top (like in the photo).

Sprinkle mozzarella and herbs.

Bake

Bake at 375°F (190°C) uncovered for 25–30 minutes until bubbly.

Rest & serve

Let sit 10 minutes so it firms up nicely.

Dinner for one tonight. Put some mozzarella on parchment paper and then added pepperoni, garlic powder, onion flakes, and Italian seasoning. It took 8 minutes to bake at 375 degrees. They cooled down and I rolled them up like pizza logs. A little low-carb marinara on the side for dipping

Bowls of Philly cheesesteak. I put some sliced white onions and mushrooms in a cast-iron pan with bacon grease and fried them. Then I added some Quick Steaks that I got from Costco's frozen food section. I put everything in the same pan and fried it all up. I put some Blackstone cheesesteak seasoning on it, added mozzarella cheese, and then I drizzled a little bit of A1 on top. There is some sugar in A1, but just a few drops on top really bring out the flavor. While everything was frying in the pan, I also added Worcestershire sauce to it. There is enough for one bowl and for lunch tomorrow as well. So tasty! You can get Steak-Ums from the freezer section of the grocery store, or you can buy thinly sliced ribeye.

Savory Portobello Mushrooms with Onions from Weight Watchers

Rich, meaty, and 1 to 3 points per serving

Serves 4 people.

6 big portobello mushroom caps with the stems cut off

One big onion, cut into thin slices

1 cup of vegetable or beef broth with little salt

2 tablespoons of low-sodium soy sauce or Worcestershire sauce

1 tablespoon of olive oil (or cooking spray for 0–1 points)

2 cloves of garlic, chopped up

1 tsp smoked paprika

1 teaspoon of onion powder

½ teaspoon of black pepper

A pinch of red pepper flakes is optional.

Fresh thyme or rosemary is optional.

How to do it

Add spices to the mushrooms.

Put the mushrooms in a baking dish with the gills facing up.

Add onion powder, pepper, garlic, and paprika to the top.

Put in some liquid and onions.

Spread the sliced onions over and around the mushrooms.

Add broth and soy or Worcestershire sauce to the dish. Don't drown them; just enough to braise.

Drip oil

Drizzle olive oil on top lightly (or spray it on thick).

Cover and bake

Wrap it tightly in foil.

Put it in the oven at 400°F (205°C) for 30 minutes.

Uncover and caramelize

Take off the foil and bake for another 15 to 20 minutes, or until the mushrooms are dark, soft, and juicy, like in your picture.

Let it rest and serve.

Let them sit for five minutes so they can soak up the juices.

Place slices of mozzarella cheese on a baking sheet lined with parchment paper. Bake for 5 minutes at 375° Take the cheese out of the oven and put ground beef or sausage on top of it. Then, add a scoop of ricotta cheese and season it with Italian and garlic salt. Finally, put a slice of mozzarella cheese on top. Let it cool after baking for another 8 to 10 minutes. Put it on a paper towel to soak up the grease, and then sprinkle it with parmesan cheese. I put marinara on mine. SO GOOD

Weight Watchers Lasagna Cups (WW-Friendly)
Makes 12 cups
1 cup serving size Ingredients

12 wonton wrappers equal 3 points (¼ point each on most plans).

0–3 points for 1 lb of extra-lean ground turkey or 96% lean beef, depending on the plan.

1½ cups of marinara sauce without sugar = 0 points

4 points for ¾ cup of part-skim ricotta cheese

6 points for ¾ cup of shredded part-skim mozzarella

3 points for ¼ cup of grated Parmesan cheese

1 tsp of Italian seasoning is worth 0 points.

½ teaspoon of garlic powder = 0 points

Add salt and pepper to taste.

How to do it

Set the oven to 375°F. Use nonstick spray to coat a muffin tin.

To make a bowl, press one wonton wrapper into each muffin cup.

In a skillet over medium heat, cook the meat until it is browned. Add garlic powder, Italian seasoning, salt, and pepper to taste. If necessary, drain.

Add marinara to the meat that has already been cooked and stir.

Put cups together

Put the meat mixture into each wonton.

Put a small amount of ricotta on top.

Add mozzarella and Parmesan on top.

Bake for 15 to 18 minutes, or until the cheese is melted and the edges are crispy.

Let them cool for 5 minutes before taking them out (they get firmer as they cool).

WW Points (for each cup)

2 to 3 points each, depending on the kind of meat and the exact cheese brands

Use a food processor or a grater to turn the cauliflower into pieces that look like rice. Put the cauliflower rice in the microwave for 5 minutes, then let it cool. Put it in a clean towel and squeeze out as much water as you can. Put the cauliflower, egg, mozzarella, Parmesan, and spices in a bowl and mix them together. Blend well.
