🍗Delicious Easy Pesto Chicken! 🌿
With Pampered Chef Italian Seasoning and homemade Pesto Sauce 😋

Throw it on your favorite GF pasta with some wilted spinach and grated Romano Cheese for a great weeknight dinner :)

Make the pesto sauce ahead to have on hand. Can store in the fridge up to 1 week, or freeze. You can totally customize this, making it a paste or leaving it rough chopped, making it thicker or runny, add hot pepper for a kick or pine nuts and/or parmesan for a more traditional pesto sauce.

RECIPE FOR PESTO SAUCE

2 cups fresh basil leaves
5 cloves garlic
1/2 cup olive oil (more or less to achieve desired thickness)
Pinch of salt

Finely mince basil and garlic (I use food processor). Add to jar with oil and salt. Shake or stir to blend.

For the chicken:
Cut Chicken breasts in half, pound to even thickness
Sprinkle lightly with kosher salt and Pampered Chef Italian Seasoning (see comments for link)
Add 1 Tbsp of the pesto Sauce to each side and let sit in the fridge for 30 minutes.

Fry the chicken on medium about 6 minutes each side until cooked through.

Remove the chicken from the pan.

Reduce heat to low, add spinach leaves and saute just until wilted.
Remove from heat, add cooked pasta and toss until well coated.

Top with chicken and parmesan or romano cheese 🧀
