Thinned after 15 years of use and abuse. Finished with 1k Shapton Glass.

Thinning a knife is a slow, deliberate process. Easy to mess up, hard to master. But when it’s done right, it completely transforms how a blade moves through food.

If your Japanese knives feel like they’re wedging, splitting, or forcing you to push harder even after a fresh edge its probably not the edge. It’s the geometry. Which is where thinning comes in.

Most people sharpen.
Very few correct the blade.

⚠️ Not all knives qualify, this is precision work- not a quick fix. Expect a few days lead time if your knives need thinning

Getting a knife to cut well takes more than getting a razor sharp edge. This is why even when you sharpen or bring it to someone to sharpen , it rarely cuts as well as the day you got it. Re-tuning the geometry of a knife takes years of practice and the craft needs to crossover and overlap into the art of knife making itself. Skills that take years to develop and working through thousands of knives to dial in 🔪

✨ Big news from the NSG Sharpening Convention! ✨

After 6 days of, study, prep, and almost 6 hours of some of the most stressful tests I’ve ever taken… the results came in last night.

There are 3 levels of certification in the NSG:
✅ Certified
✅ Master
✅ Grandmaster (for mastering 2+ disciplines)

This year I was the only sharpener to achieve Grandmaster certification — an extremely rare feat for a first-time certifier.

On top of that, my shears scored #1 in both shear disciplines, outpacing sharpeners with 20+ years of experience.

It was an incredible opportunity to meet and catch up with some of the most talented sharpeners in the country, be evaluated by my peers, and grow as a professional sharpener.

Most importantly, I couldn’t have done it without the trust and support of my amazing customers and clients — and my lovely, incredible wife, Caroline. Thank you this one is for y’all. 🙏✂️🔪💈🍻
