Get ready for a slice of heaven with this Strawberry Crunch Layer Cake! It's colorful, delicious, and perfect for any celebration! 🍓🍰✨
Ingredients:
- 2 1⁄2 cups all-purpose flour
- 2 1⁄2 tsp baking powder
- 1⁄2 tsp salt
- 3⁄4 cup unsalted butter, softened
- 1 3⁄4 cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup whole milk
- Red food coloring (optional for pink layers)
- Yellow food coloring (optional for yellow layers)
- 2 (8 oz) blocks cream cheese, softened
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tsp vanilla extract
- 20 golden Oreo cookies
- 3 tbsp unsalted butter, melted
- 1⁄2 cup freeze-dried strawberries (or strawberry gelatin mix)
Directions:
1. Preheat your oven to 350°F (175°C) and grease three 8-inch cake pans with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, and salt. This will be the dry mix for your cake.
3. Now, in a large mixing bowl, cream the softened butter and granulated sugar together until it’s light and fluffy—a delightful fluffiness!
4. One by one, add the eggs, mixing well after each addition, then stir in that dreamy vanilla extract.
5. Gradually blend the dry mixture with the wet ingredients, alternating with the whole milk until you have a smooth, gorgeous batter.
6. Divide the batter into two bowls. Feel free to tint one batch pink with red food coloring and the other yellow if you’re feeling extra fancy!
7. Pour the batter into your prepared pans and pop them in the oven for about 25-30 minutes. They’re done when a toothpick inserted in the center comes out clean. Let them cool completely.
8. While your cakes are cooling, let’s whip up the frosting! Beat the softened cream cheese and butter until they’re smooth and creamy. Gradually add the powdered sugar and vanilla, mixing until fluffy and irresistible.
9. For the strawberry crunch topping, crush the golden Oreos and freeze-dried strawberries (or mix with strawberry gelatin) in a food processor until they’re crumbly. Stir in the melted butter until everything is combined, creating that crunchy goodness!
10. Time to assemble! Place one cake layer on a serving plate and spread that luscious cream cheese frosting on top. Add the second layer and repeat, finishing with the third layer.
11. Frost the outside of your masterpiece with the remaining cream cheese frosting, making it look as pretty as can be!
12. Now, gently press that strawberry crunch topping into the sides and top of the cake until it’s evenly coated.
13. Refrigerate for at least 1 hour to set everything in place, slice it up, and enjoy your creation!
