Garlic Herb Roasted Eggplant with Feta
Ingredients
2 Large eggplants, sliced into ½-inch rounds

¼ cup Extra virgin olive oil (divided)

3 cloves Garlic, finely minced

½ cup Cherry tomatoes, diced or halved

½ cup Feta cheese, crumbled

¼ cup Fresh parsley and chives, finely chopped

Chili flakes, to taste

Salt and black pepper, to taste

For Serving:

Fluffy couscous (topped with fresh parsley and diced red bell peppers)

Instructions
Prep the Eggplant: Preheat your oven to 200°C (400°F). Arrange the eggplant rounds on a baking sheet lined with parchment paper. Lightly score the surface of each round in a diamond pattern to help the flavors absorb.

Season and Roast: Brush both sides of the eggplant rounds generously with olive oil, then season with salt and black pepper. Roast in the oven for 25–30 minutes, flipping halfway through, until they are beautifully tender and a golden-brown char begins to form on the edges.

Mix the Herb Topping: While the eggplant is roasting, mix the minced garlic, chopped parsley, chives, diced cherry tomatoes, and a touch of olive oil in a small bowl.

Load the Platter: Arrange the warm, roasted eggplant rounds overlapping on a large serving platter.

Garnish: Spoon the garlic, herb, and tomato mixture evenly over the eggplant. Blanket the platter with the crumbled feta cheese and add a sprinkle of chili flakes if you like a bit of heat. Drizzle any remaining olive oil over the top.

Plate and Serve: Serve alongside a bed of warm, fluffy couscous mixed with diced red peppers. Use tongs to lift a steaming, tender slice of eggplant and enjoy immediately!

Low-Carb Cheesy Zucchini Rollatini
Ingredients
3 Large zucchinis, sliced lengthwise into thin ribbons (about ⅛-inch thick)

1½ cups Ricotta cheese

1 cup Mozzarella cheese, shredded (divided)

½ cup Parmesan cheese, freshly grated

1 Large egg

2 cups Marinara sauce

2 cloves Garlic, minced

Fresh basil leaves, chopped (plus extra for garnish)

Salt and black pepper, to taste

Olive oil, for greasing the skillet

Instructions
Prep the Zucchini Ribbons: Use a mandoline slicer or a sharp knife to create thin zucchini ribbons. Lay them out on paper towels, sprinkle lightly with salt, and let them sit for 15 minutes to release excess moisture. Pat dry.

Mix the Filling: In a medium bowl, combine the ricotta cheese, egg, minced garlic, half of the shredded mozzarella, the grated Parmesan, and chopped fresh basil. Season with a pinch of salt and pepper, mixing until smooth.

Roll and Assemble: Set up a large cast-iron skillet and spread a thick layer of marinara sauce across the bottom. Take 2 to 3 overlapping zucchini ribbons, spoon a generous tablespoon of the ricotta mixture onto one end, and gently roll them up. Place the rollatini seam-side down into the marinara sauce. Repeat until the skillet is beautifully filled.

Top with Sauce and Cheese: Spoon a little extra marinara sauce over the center of each roll, then blanket the top with the remaining mozzarella cheese.

Bake to Bubble: Bake at 190°C (375°F) for 20–25 minutes until the zucchini is completely tender, the sauce is bubbling around the edges, and the cheese on top is beautifully melted and golden.

Serve: Garnish with fresh basil leaves. Use a spatula to scoop up the warm rollatini, showing off that incredible cheese stretch, and serve immediately alongside fresh greens and roasted tomatoes.

Mediterranean Garlic Herb Roasted Turkey Breast
Ingredients:

500g Turkey breast fillet

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon paprika

Salt and black pepper to taste

Instructions:

Prep: Preheat your oven to 190°C. Line a small baking dish with parchment paper or lightly grease it with oil.

Make the Herb Rub: In a small bowl, mix together the olive oil, minced garlic, thyme, rosemary, paprika, salt, and black pepper to form a thick paste.

Coat: Pat the turkey breast completely dry with a paper towel. Rub the garlic-herb paste evenly over the entire surface of the turkey, pressing it into the meat.

Roast: Place the turkey breast in the baking dish and roast for 35–40 minutes. Use a meat thermometer to ensure the internal temperature reaches 74°C.

Mediterranean Creamy Lemon Chicken Espagnole
Ingredients:

400g Chicken breast, cut into thin cutlets or slices

1 tablespoon olive oil

1/2 cup low-sodium chicken broth

1/4 cup heavy cream

2 tablespoons fresh lemon juice

1 clove garlic, minced

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh herbs for serving

Instructions:

Sear the Chicken: Season the chicken breast slices on both sides with salt, pepper, and Italian seasoning. Heat the olive oil in a skillet over medium-high heat. Cook the chicken for 3–4 minutes per side until beautifully golden and cooked through. Remove the chicken from the pan and set it aside on a plate.

Sauté Aromatics: Lower the heat slightly to medium. Add the minced garlic to the remaining oil in the skillet and cook for about 30 seconds until fragrant.

Deglaze: Pour in the chicken broth and fresh lemon juice. Use a wooden spoon to scrape up all the flavorful, browned bits stuck to the bottom of the pan.

Thicken the Sauce: Stir in the heavy cream and bring the mixture to a gentle simmer. Let it bubble for about 2 minutes until it reduces slightly and turns into a velvety sauce.

Combine & Serve: Return the cooked chicken slices to the pan, turning them to coat. Spoon the rich lemon sauce generously over the top, garnish with fresh herbs, and serve warm.
