Garlic Herb Roasted Eggplant with Feta
Ingredients
2 Large eggplants, sliced into ½-inch rounds
¼ cup Extra virgin olive oil (divided)
3 cloves Garlic, finely minced
½ cup Cherry tomatoes, diced or halved
½ cup Feta cheese, crumbled
¼ cup Fresh parsley and chives, finely chopped
Chili flakes, to taste
Salt and black pepper, to taste
For Serving:
Fluffy couscous (topped with fresh parsley and diced red bell peppers)
Instructions
Prep the Eggplant: Preheat your oven to 200°C (400°F). Arrange the eggplant rounds on a baking sheet lined with parchment paper. Lightly score the surface of each round in a diamond pattern to help the flavors absorb.
Season and Roast: Brush both sides of the eggplant rounds generously with olive oil, then season with salt and black pepper. Roast in the oven for 25–30 minutes, flipping halfway through, until they are beautifully tender and a golden-brown char begins to form on the edges.
Mix the Herb Topping: While the eggplant is roasting, mix the minced garlic, chopped parsley, chives, diced cherry tomatoes, and a touch of olive oil in a small bowl.
Load the Platter: Arrange the warm, roasted eggplant rounds overlapping on a large serving platter.
Garnish: Spoon the garlic, herb, and tomato mixture evenly over the eggplant. Blanket the platter with the crumbled feta cheese and add a sprinkle of chili flakes if you like a bit of heat. Drizzle any remaining olive oil over the top.
Plate and Serve: Serve alongside a bed of warm, fluffy couscous mixed with diced red peppers. Use tongs to lift a steaming, tender slice of eggplant and enjoy immediately!
