🍔 Bacon Cheeseburger Tater Tot Casserole

Ingredients (6–8 servings)

500 g ground beef 🥩
150 g bacon, cooked and chopped 🥓
1 small onion, finely diced 🧅
2 cloves garlic, minced 🧄
1 can (300 g) cream of mushroom soup
120 ml milk
2 tbsp ketchup
1 tbsp yellow mustard
1 tbsp Worcestershire sauce
200 g shredded cheddar cheese 🧀
700–900 g frozen tater tots
Salt and black pepper, to taste
1 tbsp cooking oil

Instructions

Preheat the oven to 190°C (375°F).
Heat the oil in a large skillet. Cook the onion for 2–3 minutes, then add the ground beef and garlic. Cook until the beef is browned. Drain excess fat.
Stir in the cream of mushroom soup, milk, ketchup, mustard, and Worcestershire sauce. Season with salt and pepper.
Mix in half of the cooked bacon and 100 g of the cheddar cheese.
Transfer the mixture to a greased 9×13-inch (23×33 cm) baking dish.
Sprinkle the remaining cheese and bacon over the top.
Arrange the frozen tater tots evenly over everything.
Bake for 35–45 minutes, until the tater tots are golden and crispy and the casserole is bubbling.
Let rest for 5 minutes before serving.

Ingredients (12 bars)

For the crust:

2 cups (250 g) all-purpose flour
½ cup (100 g) granulated sugar
½ tsp salt
1 cup (225 g) unsalted butter, melted

For the lemon cream filling:

4 large eggs
1½ cups (300 g) granulated sugar
¼ cup (30 g) all-purpose flour
½ cup (120 ml) fresh lemon juice
1 tbsp lemon zest
½ cup (120 ml) heavy cream
1 tsp vanilla extract
Powdered sugar, for dusting

Instructions

Preheat oven to 350°F (175°C). Line a 9×13-inch (23×33 cm) baking pan with parchment paper.
Mix flour, sugar, salt, and melted butter until a soft crumbly dough forms.
Press the mixture firmly into the bottom of the pan. Bake for 18–20 minutes, until lightly golden.
Meanwhile, whisk together eggs, sugar, flour, lemon juice, lemon zest, heavy cream, and vanilla until smooth.
Pour the lemon mixture over the hot crust.
Bake for another 20–25 minutes, until the center is set but still slightly soft.
Let cool completely, then refrigerate for at least 2 hours.

French Apple Cake

Ingredients

¾ cup (95 g) all-purpose flour
¾ tsp baking powder
Pinch of salt
2 large eggs
¾ cup (150 g) sugar
½ cup (115 g) unsalted butter, melted and cooled
1 tsp vanilla extract
2 tbsp dark rum (optional, but traditional)
3–4 apples (about 450–500 g), peeled, cored, and cut into small chunks
Powdered sugar for serving

Method

Heat oven to 350°F / 175°C. Butter an 8- or 9-inch (20–23 cm) round cake pan and line the bottom with parchment.
Whisk together flour, baking powder, and salt.
In another bowl, whisk eggs and sugar until pale and slightly thickened. Mix in melted butter, vanilla, and rum.
Fold in the flour mixture just until combined.
Fold in the apples. It may look like there are far more apples than batter—that’s exactly right.
Spread into the pan and bake for 40–50 minutes, until golden and a toothpick inserted into a cakey section comes out clean.
Cool for about 15 minutes before removing from the pan. Dust with powdered sugar once cooled.

Tip: Use apples that hold their shape, such as Honeycrisp, Pink Lady, Braeburn, or Granny Smith. Mixing a sweet apple with a tart one gives especially good flavor.

2 tbsp olive oil
1½ tbsp Cajun seasoning
½ tsp smoked paprika

Salt and black pepper, to taste

For the Pasta & Sauce

20 oz (565 g) cheese tortellini
2 tbsp butter
4 cloves garlic, minced
1½ cups heavy cream
½ cup chicken broth
½ cup Parmesan cheese, freshly grated
½ cup mozzarella cheese, shredded
½ cup provolone cheese, shredded
½ cup cream cheese
1 tsp Cajun seasoning
½ tsp Italian seasoning
½ cup sliced bell peppers, optional
2 tbsp fresh parsley, chopped
Instructions
Cook the tortellini: Cook according to package directions until tender. Reserve ½ cup pasta water, then drain.
Season the chicken: Toss chicken with Cajun seasoning, paprika, garlic powder, salt, and pepper.
Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken for 4–6 minutes, turning occasionally, until golden and cooked through. Remove from the skillet.
Start the Alfredo: Reduce heat to medium and melt the butter. Add garlic and cook for 30 seconds.
Pour in the chicken broth and heavy cream. Stir in Cajun seasoning and Italian seasoning. Simmer gently for 3–4 minutes.
Add the four cheeses: Lower the heat and add cream cheese, Parmesan, mozzarella, and provolone. Stir continuously until melted into a smooth, luxurious sauce.
Combine: Add the cooked tortellini and Cajun chicken. Gently toss until everything is coated. Add a splash of reserved pasta water if the sauce needs thinning.

🍝 Homemade Seafood Pasta

A creamy, garlicky Italian-style pasta loaded with shrimp, mussels, clams, and white w**e—just like the dish in your photo.

Ingredients
300 g spaghetti or linguine
250 g shrimp, peeled and deveined
250 g mussels, cleaned
200 g clams, cleaned
3 garlic cloves, finely chopped
1 small onion, finely chopped
120 ml dry white w**e
2 tbsp olive oil
2 tbsp butter
150 ml heavy cream (optional, for a creamy version)
½ tsp chili flakes
2 tbsp fresh parsley, chopped
Salt and black pepper
½ lemon
50–100 ml pasta water
Instructions
Cook the pasta:
Boil salted water and cook spaghetti until al dente. Reserve about 100 ml of pasta water, then drain.
Cook the seafood:
Heat olive oil and butter in a large pan. Add garlic and onion and cook for 2 minutes.
Add the clams and mussels, pour in the white w**e, and cover. Cook for about 4–5 minutes, until the shells open. Discard any shells that remain closed.
Add the shrimp, chili flakes, black pepper, and a little salt. Cook for 2–3 minutes, until the shrimp turn pink.
Make the sauce:
For the creamy version, add the heavy cream and simmer gently for 2–3 minutes. Add a splash of reserved pasta water if the sauce is too thick.
Add the cooked pasta directly to the pan. Toss everything together for 1–2 minutes, allowing the pasta to absorb the seafood sauce.
Finish with fresh parsley and a squeeze of lemon.
