I made this for a late lunch today here in Glyfada, and the result was even better than I expected. It’s incredibly juicy, high in protein, and that whipped feta base is a total game changer. I started making this for breakfast here in Glyfada whenever I want something satisfying but actually healthy. It’s a pizza base made entirely from cottage cheese, and I promise you—it bakes firm and holds its shape perfectly! No yeast, no flour, just real Mediterranean fuel to keep you full for hours. Ingredients you’ll need:
• 1/2 cup (150g) Cottage Cheese
• 1 Egg (L)
• 1/2 cup (50g) Almond Flour

Living here on the Aegean coast, I missed that deep, nutty flavor of 100% whole wheat bread without the added sugars and preservatives you often find in stores. So, I started experimenting with my air fryer and a simple overnight secret called "poolish."
No kneading. No mess. Just four basic ingredients and a little bit of patience. The result? A crust so crispy it sings when you cut it, and a soft, airy middle.

Most people avoid the air fryer for chicken because it dries out so fast. But living here in Greece, I’ve learned that the secret is always in the marinade and the timing.
