You need to try this Corn Salad!🌽 It is super simple, flavorful and satisfying. You could make it even easier & quicker by substituting some canned or frozen (then thawed) corn

RECIPE (gluten free, vegetarian, vegan/dairy free option**)
-2.5 cups cooked corn (from 3 corn on the cob)
-1 cup halved cherry or grape tomatoes
-1/2 cup crumbled feta **can sub a vegan feta
-1/4 cup diced shallot
-1/4 cup chopped basil
-2 tbsp chopped mint
-1 tbsp olive oil
-can add salt + pepper if desired!

if you’re using corn on the cob, bring a pot or deep pan of water to a boil. in the meantime, shuck the corn. once water is boiling, add corn and reduce heat to low. cover and cook for about 5 minutes. rinse with cold water to cook it down. cut the corn off the cob. add corn and all the remaining ingredients to a large bowl. toss to combine & enjoy! keeps well in the fridge.

What better way to spend Sunday than with great food! Try this Smothered Pork Chops recipe!

Ingredients:
1 lb Center Cut Pork Chops
2 cups Chicken Broth
Yellow Onion, thinly sliced
4 Garlic Cloves, but minced
Fresh Thyme
2 cups Flour
1 tsp Yellow Mustard
Worcestershire Sauce
1 cup Vegetable Oil
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Paprika
1 tsp Cayenne
Salt
Pepper

Instructions:

1 .Preheat oven to 375 degrees.
2. Once the meat is at room temperature, pat dry to remove excess moisture.
3. Add pork chop to a large bowl, and coat with oil. Next add egg, worcestershire sauce, mustard, herbs, and seasonings.
4. In another bowl, combine flour and seasonings. Coat pork chop, and repeat until the batch is complete.
5. Add 1 cup oil to skillet, and heat until the oil reaches 350 degrees. Lightly fry on both sides for about 3-4 minutes each.
6. Remove pork chops from skillet and keep warm.
7. In the same skillet sauté onion and garlic until translucent. Add remaining flour mixture (1/2 cup) and stir until roux reaches desired color.
8. Add chicken stock and stir occasionally.
9. Reduce heat and allow gravy to thicken. Season and adjust to your likeness, add more flour to thicken.
10. Return the pork chops to the skillet. Coat chops with gravy and allow it to simmer until the pork is completely cooked through.
