Mixed Berry Cheesecake 🍓🫐🍰
This creamy mixed berry cheesecake features a buttery graham cracker crust, silky cheesecake filling, glossy berry topping, and fresh strawberries, raspberries, blueberries, and blackberries for the ultimate bakery-style dessert. Ingredients
For the Crust
2 cups graham cracker crumbs or digestive biscuits
6 tbsp melted butter
2 tbsp sugar
For the Cheesecake Filling
16 oz (450g) cream cheese, softened
¾ cup sugar
2 eggs
1 tsp vanilla extract
½ cup sour cream or heavy cream
For the Berry Topping
1 cup strawberries
1 cup raspberries
1 cup blueberries
1 cup blackberries
½ cup berry jam or berry sauce
1 tbsp lemon juice
Instructions
Preheat oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and sugar, then press into a springform pan.
Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
Pour filling over the crust and bake for 45–55 minutes until the center is slightly set.
Cool completely, then refrigerate for at least 4 hours or overnight.
Spread berry sauce or jam over the cheesecake top.
Decorate generously with fresh strawberries, raspberries, blueberries, and blackberries.
