🧁Gooey Mini Cakes🍫

🛒 Ingredients
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 cup sugar
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1/2 tsp vanilla powder or alcohol-free vanilla flavor
- 1/3 cup chocolate chips

👩‍🍳 Directions
Preheat your oven to 180°C (350°F). Lightly grease a muffin pan or use liners.

In one bowl, mix flour, cocoa powder, sugar, salt, and baking powder until well combined.

Add milk, oil, egg, and vanilla. Stir gently until you get a smooth batter. Do not overmix.

Fold in the chocolate chips to keep it extra gooey inside.

Pour the batter into muffin cups, filling them about 3/4 full.

Bake until the edges are set but the center is still soft and slightly gooey.

- 2 salmon fillets
- 250 g large shrimp, peeled and deveined
- 4 medium potatoes, peeled and cut into chunks
- 2 tbsp butter
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 1/2 cup chicken broth
- 3/4 cup cooking cream
- 2 tbsp grated parmesan cheese
- 1 tsp dried parsley or 1 tbsp chopped fresh parsley
- 1/2 tsp paprika
- 1/2 tsp black pepper
- Salt, to taste
- 2 tbsp milk, for the potatoes
- 1 extra tbsp butter, for the potatoes

👩‍🍳 Directions

Boil the potatoes in salted water until very tender. Drain well, then mash with the extra butter, milk, and a small pinch of salt. Cover to keep warm.

Season the salmon and shrimp with paprika, black pepper, and a little salt.

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the salmon and cook until golden on both sides and cooked through. Remove to a plate.

In the same pan, add the shrimp and cook just until pink and tender. Remove and set aside with the salmon.

Lower the heat to medium. Add the remaining butter and garlic, then stir for about 30 seconds. Pour in the chicken broth and let it bubble for a minute.

Stir in the cooking cream, parmesan, and parsley. Let the sauce simmer gently for 2 to 3 minutes until slightly thickened.

- 1 can diced tomatoes with green chilies, about 280 g
- 2 cups beef or chicken broth
- 1 cup milk
- 1 1/2 cups shredded cheddar cheese
- 100 g cream cheese, softened
- 1/2 tsp black pepper
- Salt, to taste
- Chopped parsley or cilantro, optional for serving

- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1/4 cup finely chopped smoked beef or turkey strips
- 2 tbsp finely chopped mushroom stems
- 1 garlic clove, minced
- 1 tbsp chopped parsley, plus more for serving
- 1 tbsp olive oil
- 1/4 tsp black pepper
- 1/4 tsp paprika
- Pinch of salt
- 2 tbsp breadcrumbs, optional for the top

Preheat the oven to 200°C and line a small baking tray or dish with baking paper. Wipe the mushrooms clean and remove the stems, then place the caps on the tray.

- 1/4 to 1/2 tsp chili flakes, optional

- 1 tbsp oil
- 2 cups cooking cream
- 1/2 cup chicken broth
- 1/2 cup shredded cheddar or mozzarella
- 2 tbsp chopped parsley
- 2 tbsp reserved pasta water, if needed

2 tbsp sweet chili sauce
