π Ingredients
The Peppers: 5-6 large bell peppers (mixed red and yellow, tops removed and cored)
The Filling: 1 lb ground beef (or turkey), 1.5 cups cooked rice, 1 small onion (diced), 2 cloves garlic (minced)
The Sauce Mix: 1 cup marinara sauce, Β½ tsp Italian seasoning, salt & black pepper to taste
The Cheese: 1 cup shredded mozzarella or Monterey Jack cheese
Garnish: Fresh parsley or chives (finely chopped)

Prep the Filling: Preheat your oven to 375Β°F (190Β°C). In a large skillet over medium-high heat, brown the ground beef with the diced onion and minced garlic. Drain excess fat.
Combine: Stir the cooked rice, marinara sauce, Italian seasoning, salt, and pepper into the beef until well combined.
Stuff & Bake: Stand the hollowed-out bell peppers upright in a baking dish. Spoon the filling generously into each pepper. Pour a splash of water or broth into the bottom of the dish, cover with foil, and bake for 35β40 minutes until the peppers are tender.
Cheese Crust: Remove the foil, smother the tops of the peppers with the shredded cheese, and bake uncovered for another 5β10 minutes until melted and bubbling.
