Sweet Potato Skins
Deliciously crispy sweet potato skins topped with melty cheese, savory beef crumbles, fresh green onions, and creamy sour cream.
Essential Components :
4 medium sweet potatoes.
Salt and pepper.
Cooking spray.
6 slices of cooked beef, crumbled.
1 cup cheddar cheese, shredded.
2 green onions, chopped.
1/2 cup sour cream.
Step-by-step Process :
Set oven at 400°F (200°C) and prepare a greased foil-lined baking sheet.
Clean and pierce sweet potatoes, positioning them on the baking tray.
Roast the sweet potatoes until tender, approximately 45 to 60 minutes.
After cooling, halve the potatoes lengthwise and remove most of the inner flesh, keeping a 1/4-inch border along the skin.
Raise oven heat to 450°F (230°C).
Arrange the hollow sweet potato halves on the baking tray; season with salt, pepper and a light mist of cooking spray.
Bake for 10 minutes, then rotate and continue for 10 more minutes until crisped.
Add shredded cheese to each skin, returning them to the oven to bake until the cheese is melted and golden, about 3-5 minutes.
Upon removing from the oven, sprinkle each with crumbled beef, green onions, and add a scoop of sour cream on top.
