Instructions
Preheat the oven to 325°F (163°C).
Pat the lamb shanks dry with paper towels. Season generously with the salt, black pepper, and smoked paprika.
Heat the olive oil in a large Dutch oven over medium-high heat. Sear the lamb shanks for 3 to 4 minutes per side until deeply browned. Transfer them to a plate.
Add the diced onion, carrots, and celery to the same pot. Cook for 6 to 8 minutes, stirring occasionally, until the vegetables have softened.
