Juicy Steak, Roasted Asparagus & Fresh Avocado Salad Plate

This hearty plate brings the goods: tender pan-seared steak with caramelized onions, glossy roasted asparagus, and a crunchy lettuce-tomato-avocado salad. Simple, filling, and packed with flavor!

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬

7 oz beef steak

8–10 asparagus spears

2 cups chopped iceberg or romaine lettuce

1 medium tomato, chopped

½ avocado, cubed

¼ small white onion, thinly sliced

½ small cucumber, chopped

1 tbsp olive oil

1 tsp butter

½ tsp garlic powder

½ tsp sea salt

½ tsp freshly ground black pepper

1 tbsp fresh lemon juice

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬

Cook the asparagus: Toss the asparagus with a little olive oil, salt, and pepper. Roast at 425°F (220°C) for 10–12 minutes, or pan-sear until tender, glossy, and lightly browned.

Sear the steak: Season the steak with garlic powder, salt, and pepper. Heat a skillet over medium-high heat with olive oil and cook to your preferred doneness. Let it rest for 5 minutes before slicing into thick pieces.

Get those onions going: Add sliced onion and butter to the same skillet. Cook until softened and lightly caramelized, then spoon the onions and pan juices over the steak.

Make the salad: Toss chopped lettuce, tomato, cucumber, avocado, and a few thin onion slices with lemon juice, a touch of olive oil, salt, and pepper.

Load the plate: Arrange the roasted asparagus across the upper-left, pile the fresh chopped salad along the lower-left and center, and place the juicy sliced steak with onions on the right.

Serve it up: Spoon any remaining steak juices over the beef and serve immediately. That's one seriously satisfying plate!

Sausage Gravy & Biscuits

Ingredients:

For the Biscuits:
• 2 cups all-purpose flour
• 1 tbsp baking powder
• 1 tsp salt
• ½ tsp baking soda
• 6 tbsp cold unsalted butter, cubed
• ¾ cup buttermilk

For the Sausage Gravy:
• 1 lb breakfast sausage
• ¼ cup all-purpose flour
• 3 cups whole milk
• ½ tsp black pepper
• ¼ tsp garlic powder
• ¼ tsp onion powder
• Salt, to taste
• 2 tbsp butter, if needed

Method:

1. Preheat the oven to 425°F (220°C).
2. In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
3. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the buttermilk just until a soft dough forms.
4. Turn the dough onto a lightly floured surface, gently knead a few times, and pat it about ¾-inch thick. Cut out biscuits and place them on a baking sheet.
5. Bake for 12–15 minutes, until golden brown. Set aside.
6. Meanwhile, cook the breakfast sausage in a large skillet over medium heat, breaking it into small crumbles. Cook until browned and fully cooked.
7. Sprinkle the flour over the sausage and stir constantly for 1–2 minutes.
8. Gradually pour in the milk while stirring to prevent lumps. Add black pepper, garlic powder, onion powder, and a little salt.
9. Simmer for 5–8 minutes, stirring frequently, until the gravy is thick and creamy. Add a little more milk if it becomes too thick.
10. Split the warm biscuits in half and generously spoon the sausage gravy over them.
11. Serve hot with extra black pepper on top.

🥩 Garlic Butter Ribeye Steak

Ingredients:
• 2 ribeye steaks (10–12 oz / 280–340 g each)
• 1 tbsp olive oil
• 1 tsp kosher salt
• ½ tsp freshly ground black pepper
• 4 tbsp unsalted butter
• 4 garlic cloves, lightly crushed
• 2 sprigs fresh rosemary
• 2 sprigs fresh thyme

Method:
Pat the steaks completely dry and season both sides generously with salt and black pepper. Let them sit at room temperature for about 20–30 minutes. Heat a heavy skillet over high heat until very hot, then add the olive oil. Sear the steaks for about 3–4 minutes per side for medium-rare, adjusting the time according to thickness and desired doneness. Lower the heat, add butter, garlic, rosemary, and thyme, and spoon the foaming garlic butter repeatedly over the steaks for 1–2 minutes. Rest the steaks for 5–10 minutes before slicing so the juices redistribute.

🌿 Herb-Crusted Sirloin Steak

Ingredients:
• 2 sirloin steaks (8 oz / 225 g each)
• 1 tbsp olive oil
• 1 tsp kosher salt
• ½ tsp black pepper
• 2 garlic cloves, minced
• 1 tbsp finely chopped fresh parsley
• 1 tsp chopped fresh rosemary
• 1 tsp chopped fresh thyme
• 1 tsp Dijon mustard

Method:
Combine the garlic, parsley, rosemary, thyme, Dijon mustard, and olive oil into a paste. Pat the steaks dry, season with salt and pepper, then spread the herb mixture over both sides. Heat a skillet or grill over medium-high heat and cook the steaks for approximately 3–5 minutes per side, depending on thickness and desired doneness. Allow them to rest for 5 minutes before serving. The herbs form a fragrant crust while the center stays juicy.

🧈 Creamy Peppercorn Strip Steak

Ingredients:
• 2 New York strip steaks (8–10 oz / 225–280 g each)
• 1 tbsp olive oil
• 1 tsp kosher salt
• ½ tsp crushed black pepper
• 1 tbsp unsalted butter
• 1 small shallot, finely minced
• 1 garlic clove, minced
• ½ cup beef broth
• ½ cup heavy cream
• 1 tbsp whole black peppercorns, lightly crushed
• 1 tsp Dijon mustard

Method:
Season the strip steaks with salt and crushed pepper. Heat olive oil in a skillet over medium-high heat and sear the steaks for about 3–4 minutes per side for medium-rare. Transfer them to a plate and rest. In the same skillet, melt the butter and sauté the shallot and garlic for about 1 minute. Pour in the beef broth, scraping up the browned bits from the pan. Add the heavy cream, crushed peppercorns, and Dijon mustard, then simmer for 2–4 minutes until the sauce thickens. Return the steaks briefly to the pan and spoon the creamy peppercorn sauce over them.

🌶️ Chimichurri Grilled Flank Steak

Ingredients:
• 1½ lb (680 g) flank steak
• 1 tbsp olive oil
• 1½ tsp kosher salt
• 1 tsp black pepper

For the chimichurri:
• ½ cup finely chopped fresh parsley
• 2 tbsp finely chopped fresh cilantro
• 2 garlic cloves, finely minced
• 2 tbsp red wine vinegar
• ⅓ cup extra-virgin olive oil
• ½ tsp dried oregano
• ¼ tsp red pepper flakes
• ¼ tsp salt

Method:
Whisk all the chimichurri ingredients together and let the sauce sit for at least 15 minutes so the flavors develop. Pat the flank steak dry and rub it with olive oil, salt, and black pepper. Heat a grill or grill pan over high heat and cook for about 4–6 minutes per side for medium-rare, depending on thickness.
