**Prep Time:** 20 minutes
**Cooking Time:** 2½–3 hours on HIGH or 4–5 hours on LOW
**Servings:** 8
# # Ingredients
# # # For the Fruit Filling
* 3 cups sliced peaches, fresh, frozen, or canned and drained
* 2 cups strawberries, hulled and quartered
* 1½ cups blueberries
* 1 cup fresh or frozen cranberries
* ¾ cup granulated sugar
* 3 tablespoons cornstarch
* 1 tablespoon fresh lemon juice
* 1 teaspoon vanilla extract
* ½ teaspoon ground cinnamon
* ¼ teaspoon salt
* 2 tablespoons unsalted butter, cut into small pieces
# # # For the Biscuit Dumplings
* 2 cups all-purpose flour
* ⅓ cup granulated sugar
* 1 tablespoon baking powder
* ½ teaspoon salt
* 6 tablespoons cold unsalted butter, cubed
* ¾ cup whole milk
* 1 teaspoon vanilla extract
# # Instructions
1. Lightly grease the inside of a 6-quart slow cooker with butter or nonstick cooking spray.
2. Add the peaches, strawberries, blueberries, cranberries, sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt.
3. Stir the fruit mixture gently until everything is evenly coated. Scatter the small pieces of butter over the filling.
4. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
5. Cut the cold butter into the flour mixture with a fork or pastry cutter until coarse crumbs form.
6. Pour in the milk and vanilla. Stir just until the dough comes together, taking care not to overmix it.
7. Divide the dough into 9 or 10 equal portions and gently shape them into round dumplings. Arrange them evenly over the fruit, leaving a little space between each one.
8. Cover and cook for **2½–3 hours on HIGH** or **4–5 hours on LOW**, until the fruit is bubbling and the biscuit dumplings are fully cooked in the center.
9. During the final 30 minutes, place a clean kitchen towel beneath the lid to absorb condensation, keeping it safely away from the heating element.
10. Turn off the slow cooker and let the cobbler rest uncovered for 15 minutes so the filling can thicken slightly.
Serve warm with vanilla ice cream, whipped cream, or a drizzle of heavy cream. Save this beautiful mixed-fruit cobbler for your next cozy family dessert! ✨
