Avocado Toast Power Plate with Eggs & Sautรฉed Mushrooms ๐

This one is giving clean breakfast but still lowkey gourmet ๐ฎโ๐ฅโcreamy avo toast, jammy eggs, juicy tomatoes, and garlicky mushrooms. Light, fresh, and straight-up nourishing!

For the Avocado Toast:
2 slices whole grain bread ๐
1 ripe avocado ๐ฅ
Salt & black pepper
Pinch chili flakes ๐ถ๏ธ
For the Eggs:
2 eggs ๐ฅ
Water for boiling
For the Mushrooms & Spinach:
1 cup mushrooms (sliced) ๐
1 cup fresh spinach ๐ฅฌ
1 tsp olive oil
1 clove garlic (minced)
Salt & pepper
For the Fresh Side:
1 cup cherry tomatoes (mixed colors) ๐
Drizzle olive oil
Pinch salt & chili flakes

1. Boil the Eggs:
Bring water to a boil, gently add eggs and cook for 6โ7 mins for that soft jammy center. Cool, peel, and slice.
2. Toast & Smash:
Toast bread until golden. Mash avocado with salt, pepper, and chili flakes, then spread thick on toast.
3. Sautรฉ the Veggies:
Heat oil in a pan, sautรฉ garlic, then add mushrooms. Cook until golden. Toss in spinach and cook until wilted. Season lightly.
4. Prep the Tomatoes:
Slice tomatoes and toss with olive oil, salt, and chili flakes for that fresh pop.
5. Build the Plate:
Top avocado toast with mushrooms and spinach. Add eggs and tomatoes on the side. Sprinkle extra chili flakes if you like it spicy ๐ฅ
